Oh, and I didn’t start cooking until a couple years ago (in my mid-30’s😅) so TY for helping ignite the flame haha We lost an important family member this past year and the holidays weren’t the same. But finding love in cooking and having access to people like you who share their creativity helped bring some joy💗LOVE that salad, btw. Happy 2025!
I do meal prep tofu scramble as well as my baked beans and then eat them for breakfast until they're gone. Since it's winter time I do baked oatmeal on my days off.

Holidays were rough and good. Husband and I both lost our jobs and I got a broken tooth pulled out and had family member has passed on. But we will bounce back. I'm back finishing my third year of college. I love your recipes it maoes me happy trying more vegan forward dishes.

If you can, please do a video on how you stay vegan when you traveled to Mexico. Eating vegan seems almost impossible when traveling and Mexican foods tend to have lard and other animal products. Btw, you are truly an inspiration. I struggle trying to stay vegan, I turn to your channel on youtube to stay motivated.

It's not even that rare in a lot of countries, especially if you're outside tourist hot spots. Combine that with potential language barrier and different cultural understandings on veganism, and saying "there will never be struggle" is just delusional and entitled.
I think this can be tricky depending on where and who you are traveling with. I'm pretty proficient in Spanish (can have conversations about food, ingredients, basic concepts) and I think that it did help a lot because some staff (understandably) did not speak english well. With this trip we asked ahead and read reviews, and many people said that the staff were very accommodating with various dietary restrictions so it worked out, though we did pack extra protein bars and shelf-stable tofu to add to meals when needed. When my husband and I travel alone I also do research in advance and make a general list of restaurants we can visit and eat at that we know will have vegan options. Luckily our families are also very understanding and will make sure we have options when we travel as a group as well. I'm sorry this isn't more helpful! Whatever country you are traveling to, I think it is helpful to learn (or write down) several phrases in the native language that allow you to say that you are vegan and the ingredients that you don't eat as well as please and thank you. It also helps to have a basic knowledge about cultural foods and how they are prepared (ex: if in Mexico I'd ask about lard, in Thailand fish sauce, etc).

I used to get JoJos chocolate from Costco that had nuts and cranberries on them and I LOVED them. I Recently got those hazelnut ones from Costco and they’re way too bitter for me 😔 i miss the other ones lol
