I love the abundance and variety of meals you cook! Everything looks great! I would encourage you to do some research into phytoestrogens. These are what are contained in soy beans (tofu) and many other plants, and they do not raise estrogen levels in humans. 😊

How I cook my greens is with olive oil and some (vegan) chicken stock. For broccoli I put them in frying pan with stock water and gently steam until just done. So delicious !

Just about anything can be beneficial in moderation and if you listen closely to what she said. She clearly said she does to want to give her boys to much of soy not that she doesn’t give them soy at all. There are no long term study showing the long term effects of high levels of soy for men and women. It’s better to error on the side of caution.

Soy doesn't contain estrogen. It contains plant compounds that look similar to estrogen but don't have the same effect as actual estrogen. It is actually cancer preventive. Studies show that even infants fed exclusively on soy formula had no difference in growth rate or hormone levels. Soy is a great nutritious protein and mineral source for anyone who doesn't have an allergy.

You really should be getting at least 2 servings of legumes in every day. Especially the kids. Their growing bodies need enough protein. Soy milk or tofu would be a good idea to have at least once a day for both the protein and other health benefits.
