Here is the written recipe if anyone wants it: First off, slice 2 onions into wedges, 5 slices of ginger and 3 stalks of spring onions Slice 1 carrot and half a turnip. Cut into wedges I’m cooking for four people so I’m using 2 beef shins Slice them into big chunks Toss the beef with tbsp of salt and set aside Before we start cooking we have to toast the spices Here we have four star anise 1 cinnamon bark which we’ll break into small pieces 1 tbsp of Sichuan peppercorns and black peppercorns Toast spices over medium heat for a minute Then chunk them into a spice bag Add 2 bay leaves into the bag too, then tie it up Heat oil in a pot over medium high heat. Add the beef and saute for three minutes until they’re well colored Take the beef out first, then add the onions, ginger, and spring onions and saute for 2 mins (monologue on how to get girls) Return beef to the pot Give it a quick stir and then add the rice wine About ¾ of a cup. Stir and cook for a minute or two Now we’ll add the flavorings. This is chilli soy bean paste, to which we’ll need 3 heap tbsp Half a cup of light soy sauce And a tbsp of sesame oil Mix well then add the carrots and the turnips Add 2 rock sugars into the mix Don’t forget the spice bag as well Top it up with about 1 litre of water Bring the stew to a boil, cover and turn heat to low Keep on a low simmer for 90 minutes When the beef is about done, we can blanch the vegetables and the noodles (shows adding salt in video but doesn’t specifically mention it) Bak choy in first, and blanch for a minute Three minutes for the noodles. You may use whichever type of noodles you like. Let’s take a look at the beef. Give the broth a taste Very tender, melt in your mouth beef shins coming right up! Shows noodles, then bak choy, carrots, beef shank, topped with the broth. Chopped spring onions for garnish, as well as some pickled cabbages.
