This that you have done (which is much to be appreciated ! 👍) actually should have been done by Vincenzo here. It would have been his job to do this to make it easier for viewers to see the various recipes, especially in such a long video with several recipes, as they do on other channels as well. Vincenzo should improve certain things on his channel, because it is not, so to speak, a “new channel”, born yesterday.

When you were cooking the pasta with chicken peas I though what if you was to add just a little Nduja to spice up the sauce. I liked it as it was but to add a little heat the Nduja.
I like you videos you make it look so easy it give some the confidence to say I can make it then they do and they are amazed that they could, but it those little tips and suggestions along the way in the videos that make it happen. And when you add Nona and you wife, it adds the realistic family homemade to it and aging the confidence I can do it for my family.

@@vincenzosplate In my area ingredients have been difficult to acquire. I have made your Carbonara . I have tried to make meals that are inexpensive, yet are the best in flavor. I look to good ingredients first, cost second. I can still keep it $5 a meal.
I don't have the cured pig cheek (Hog Jowl -here), I use a uncured pig cheek and get it cold before cutting in to the 1/4 inch, long cubed strips. Cheese is not a problem. I use a induction stove and a frying pan on warm to flavor the noodles with fat and Guanciale. Very low heat of the pan helps me time to use the pasta water and get the cheese mix better incorporated. Soon as I see everything creamy, I plate and eat with in seconds. Thank you. Great video Vincenzo! I’m looking forward to trying several of those over the next few weeks, starting with the ravioli carbonara. Guanciale isn’t available here in Canada, if I use bacon as a substitute should I use a smoked, or cured? Pancetta? New to your channel, I’ve enjoyed all your recent offerings.

I dont think i have seen an Italian breakfast yet... Never been to Italy, but i cook alot of dishes originated in Italy. I follow Vincenzo`s Plate for recepies and new ideas. Was in France... Was thinking: A country with this rich culinary history must have an AMAZING breakfast that i have yet to see!

French specialty breakfast is kind of not having any breakfast, only coffee, maybe a croissant. We keep stomach space for actual meals.

6:13 me personally, im not Vegan but if you said it's Vegan im assuming the cheese is optional.
It's vegetarian, not vegan. If you want to make it vegan don't use the cheese 😊
Cherry tomato pasta & Vincenzo's meatballs need to be in there. I make the meatballs all the time & everyone swears they're the best they've ever had. I make the cherry tomato fresh from my garden. Amazing! Everyone says it's better than a restaurant. And we have good restaurants here in NYC. The pecorino & mascarpone 🔥🔥

A lot of Italian dishes don’t appear to have meat/ fish in them - is that the norm for a Mediterranean diet? 🤔
I end up having to incorporate meat or fish for a rounded meal
This is a big difference between Italian immigrant cooking and Italian cooking,after they immigrated they weren't too poor for meat anymore so the food has a lot more meat 😆
The pesto looks good, but blending olive oil makes it bitter. It's ok to stir it in afterwards, or use a mortar and pestle. Also, if it contains cheese, it's not vegan. My daughter cannot have dairy (allergy), so I look for vegan recipes for her.
How do you make pesto vegan?
I can not eat shrimp, is there a reasonable substitution. Like would pollock work as all?? It is often used in making Surimi, fake crab and shrimp. Dungeness and King Crabs are the most common here, but I can get other ones at H Mart or similar stores. Pollock is everywhere here.
Make sure you ONLY buy organic lemons if zesting in the US.
Is Tubetti close enough? Even fresh bay leaves should be removed even though they are much softer. More Pecorino please.

This person in this clip must be an impostor impersonating Vincenzo. If there ever was "Vicenzo's Plate Sauce" it would be with heaps of pecorino included.
Another chef could copy vincenzo's recipe step by step and he'd still try and drag them in a reaction video for not being 100% rustic authentic "nooo you only cooked it for 2 hours not 4 that's not real Bolognese 😭"
