I used coconut water for manual pour over one time. I say "one time" because that's all it took to realize that I should never do that again. My mouth hated it so much that my tongue reached out and slapped both sides of my face and refused to taste anything for a few hours until I had sufficiently apologized.
The vegetable broth coffee would probably make a good base for a braised beef dish. Half that and half red wine with a chuck roast or short ribs would be killer.
I want to try to use it just like beef broth, honestly! I tried a recipe for Guiness and coffee beef stew recently that was really good, and I feel like this would be similar!

If you ever decide to do another one of these, I have a couple suggestions that might turn out good. 1: Vodka or any hard liquor - Alcoholic coffee beverages are obviously a thing, so would running a hot alcohol directly through coffee grounds be enough to make a decent drink? I don't drink alcohol personally, but I have family members that do, so while I know a little bit about what flavors theoretically go good together, I don't know anything beyond that. So, if this is a stupid idea, sorry about that. 2: Thinned-down gravy - There are recipes for "red-eye gravy" that are made using a pot of coffee in place of water. So, if you made a package of instant country gravy, but used extra water to make it liquid enough to run through the coffee maker, would you get a decent result? This particular idea, I don't think you'd want to drink it straight, but maybe dip a piece of toast into it? On a different note, have you ever heard of an online recipe for triple-distilled coffee? The recipe I've read calls the end result "Event Horizon" - coffee so dark that not even light can escape. I was kind of curious if you've ever done anything like that and what you thought about it. The recipe describes it as being served as individual shots simply so that the caffeine content isn't fatal, and that the creator's roommate didn't listen and drank a full 8 ounce cup, and was unable to sleep for three straight days. As a college student who'd really rather not turn to Adderall, this actually sounds appealing. (A high-caffeine burst being used correctly, not destroying my heart with a full cup)
