The classic looks better by having a less plastic, glossy look and has a better locking mechanism so it can hold taller or more items, buy that in itself doesn't make it worth twice as much. Do all the panniers have these bolt heads, and if so, is there a standard way to minimise damage? As well as my laptop, I'd be wary of putting any lightweight gear eg a Mountain Hardwear Ghost Whisperer jacket. That too would get shredded by bolt heads.
They weren't designed with laptops in mind. Ortlieb has Urban/commuter ones that have compartments for things like that but the older ones like the Classic were for cross country bike touring not office jobs or school. A simple fix is placing the laptop in a smaller bag or wrapping it in a sweatshirt or something which is what I do for extra protection in my backpack even though it has a laptop compartment already. Some shops sell a commuter liner to go inside Ortlieb panniers.
At 12:15, the square loop "to open the handlebar bag" can be used with a key locking mount to stop someone opening the bag
