Really I was wondering how the iddlies are so soft in village hotels; now I got the exact method of grinding the ingredients seperately. That too the urad dal had to be added to the already ground rice and allowed it for 8 hours to ferment. I need to have one answer for grinding the urad dal in mixie:- whether it should be added cold water if we grind it in mixie . Kindly enlight this point. Also I came to know that in villages the rice is more and urad dal is low in quantity and to enhance the fermentation certain people use "toddy (கள்ளு)" or yeast with sugar and water . Please kindly revert back on this point. Thanks for your presentation and we will try according to your guidance.
