A french man taught me to make this soup many years ago. He told me I could put the wine or not and that it's made traditionally both ways. I'm not a fan so i don't put it in and it's still absolutely delicious and one of my favorite winter soups. He also told me that the longer it boils the better it tastes. As you take out to serve you add more water and boil again. In the country side old farmers would leave a pot by the fire and just add onto it whenever it boiled down. Eventually it's almost black but it's incredibly flavorful. You always had something warm and nutritious when you came in from the cold. Also for vegetarians you can omit the broth and use plain water and it's still amazing.
To me, soup doesn’t have much flavor without a decent stock. I make a big vegetable stock & freeze by the quart. Lately, I’ve canned it, using my pressure canner (water bath is only for high acid foods). My recipe comes from “Love Soup” by Anna Thomas…great soup book!
"You have to be in the kitchen for an hour." You say that like it's a bad thing - just watch TH-cam videos while cooking, preferably past Preppy Kitchen videos. I love the "pass by every once in a while" demonstration, just in case folks have no idea what passing by a pot entails. LOVE each and every video you make, so thanks for making our time together so entertaining.
I do the same thing… Even though I generally know what I watch different videos of what I am cooking as I come across different ingredients that I might not have thought of!
This is my husbands favourite and, as he's not well at the moment, his appetite is a bit 'off' so I think I might make this for tonight. Thanks for the inspiration x
John, I just made this and it was fantastic. My family had seconds. I really appreciate your traditional, no-shortcut philosophy to cooking. I really enjoy putting effort and time into my dishes as this is a way of showing love and care for those we love. A French onion soup made the right way is a wonderful example of this philosophy. ❤
I made your Chicken Pot Pie Soup recipe this morning. Despite my having no milk, which I hesitatingly replaced with non-fat evaporated milk, the soup came out so so good!!
I made the cheesecake with the pecan topping yesterday it was the hit of the party and I'm making this soup right now thank you so much my grandsons told me I'm the best Yia Yia for cooking all this yummy food
Many years ago, The Galloping Gourmet said if you keep your knife wet, you won't cry when cutting onions. I have used that trick for over 30 years. It works!
Preppy Kitchen helped me make perfect macaroons, fluffy angel food cake, and creme brûlée all on the first try. I am so shocked and delighted to also find a SOUP recipe 😂❤️
Just made onion soup last week and it wasn't fully realized and after watching YOUR take on this soup I know why: 1 hour cooking time for caramelized onion!!!! Can't wait to try your recipe. Thank you.
My favorite local place is closed for renovations and I was missing her French onion soup. Thanks for the recipe. I’ll make it and invite the chef, my friend, over for lunch!
Just made this soup for my Mom’s birthday! She loved it, it was delicious! Thank you for the recipe, another one I can check off my list for making homemade! ❤
I didn't have oven safe bowls, so I put the soup in a pyrex dish, bread and cheese, and it turned out just as good (if I do say so myself😊) Simple, easy to follow, easy to make recipe I make every week now 🤗🤗 thanks!
I never had french onion soup but it was my fiancé's birthday yesterday and he LOVES french onion soup--so I decided to make your recipe and it was DELICIOUS. Thank you!!
I just found you (actually researching Christmas cakes for NEXT year... why not start early?) and all I can say is... where have you been my whole life? I cannot WAIT to try your recipes... yup... ALL of them!! Thank you!!!
There's a wonderful restaurant we go to for our family special occasions and I always order the French onion soup for my appetizer. Seeing all the time and preparation that goes into it makes me think they must always have some already made in the kitchen because I always get it in about 15 minutes!
Have been binge watching your videos…so great! You have such a brilliant teaching talent…I’m sure it was honed in those years teaching ‘middle school’. How fortunate we are that you publish this channel now! 🤩
Soooo delicious! Hadn’t made onion soup in years but had too many onions so watched a few videos and settled on this one and it came out perfect. I followed the recipe except I added about a tablespoon of better than bouillon because my store brand broth was weak. Also, I didn’t have wine so I used a little cooking sherry. Really an excellent recipe and easy to follow video. Thank You!!
Love your channel. Love your spirit. French onion soup is my all time favorite soup. That and tomato 🍅. I’m a simple soul just give me a good old bowl of tomato soup and grilled cheese lol.
You are definitely the best. I LOVEEEEEE everything that you cook ,your personality ,,Also the way you explain everything step by step.....Love your family.
@john you're absolutely right when you say if they say 20 mins to caramelise onions they're lying. Hahaha! One recipe I often make is a caramelised onions and Roquefort quiche. The onions do take nearly an hr to be reduced n properly caramelised. What I do it use my food processor to slice a few kgs of onions, get a huge batch of caramelised onions done and freeze half to use in soups, Stroganoff or with burgers.
Happy New Year!! You just kicked me um...to the delish zone! Always ready to taste new dishes! Yummy, yum! Doing the air fryer way. Waving to you from south Georgia-land of best Peaches, boiled Peanuts, & Vidalia onions!
I love this soup. I love everything you make. The time in the kitchen is not a problem. My cooking of most middle eastern food, takes many hours to finish it. I love to cook and bake anyway😊💖
So many recipes give that 20 minute time frame. As you stated, it takes ALOT longer than that, but it is well worth it! Your recipe looks drool worthy!🙃
I just made this for dinner. Yum!! I followed the recipe to a T except for the onions. I used 1 lb of regular cooking onions and 2 lbs of sweet Vidalia onions. It was rich and delicious and just perfect for a cold winter day. Love your videos. Happy New Year to you and your family!!!
It usually takes me around 40 minutes or so to caramelize onions. I set an alarm and stir every 5 minutes at first then every 3. It takes forever but I could literally eat them with a spoon. Yummmmmmmm
I love your recipes they always work. I tried your brownies today and the pizza dough just yesterday ❤ I wanted to ask you please, in case I can't use alcohol what can I replace it with? Thank youu
I like the fact you dont apologisefor the time it takes. Imy attitufe to cooking and food has changed and time spent trying to mske something nice i can smell see hear and EAT is one of the best uses of time in the world (i don't have children) ❤ ty . Great content. Inspires me to cook this and cook more
This was a great recipe to watch, and covering the onions with the lid for the first cook/sweat is key! I laughed when you said that people who tell you it takes 20 minutes to caramelize onions are lying, so true I remember years ago reading that and then wondering what am I doing wrong when it takes me 3 times as much time lol. Thank you for this video, making this today and wanted to watch someone else make it as a refresher.
I love French Onion Soup!!! I will make this for sure...The trick for not having tearing eye while cutting onions is: to turn the gas burner on and cut the onion next to it (not too close so you don't burn yourself) the burner absorbs the gas the onions secrete which is part of the onion that makes you cry. I have never cried since using this method!!! Try it!!!
John, like you, I have a very hard time cutting whole onions into slices. I've learned to cut my onions in half vertically. Then I'm able to slice them more uniformly & in thinner slices.( It gives the onion more stability to slice). I've never used flour in my recipe, but I'm giong to try it next time I make this soup. Thanks for the recipe!
Where have you been all my life? Serious, Ive just come across your channel today, and I'm SO happy I did. Thank you for being a simple kind of chef with a touch of elegance in every dish. Your amaizing! Your recipes all lookand sound so delicious!

Also for vegetarians you can omit the broth and use plain water and it's still amazing.
That ongoing soup sounds amazing!

Very cool. Also, it's not called French onion soup because it's from France, it's called that because of the thin cutting technique of the onion.
Mushroom stock is the way to go for the vegetarians
thank you very cool

*Happy New Years! Love from a small TH-camr!* ♥
🤣 right? Like I’m there already so… cook, watch cooking videos, read cooking articles…
bet I know where the rest of the wine & brandy goes
I do the same thing… Even though I generally know what I watch different videos of what I am cooking as I come across different ingredients that I might not have thought of!
If you cut the onions in half they won’t roll off the cutting board…. Every chef does that…
The best way to prevent crying when cutting onions is to not get emotionally attached.
This is my husbands favourite and, as he's not well at the moment, his appetite is a bit 'off' so I think I might make this for tonight. Thanks for the inspiration x

Please don't ever go away your recipes are so good & your videos have taught me to cook!

Yes soup! It’s so cold over here I needed this
French onion soup is so delicious 🤤. One of my favorites
I like to butter the bread slices on both sides and toast in the oven before adding to the soup. If im feeling really French I add brie. Cheers!
I'm making this for my birthday today. I spent the past 26 hours making homemade beef stock just so I could make this recipe. Thank you, mate!
Fun fact : if you chew gum while chopping onions you don’t cry… it works VERY WELL for me!!
Thanks
Just made this soup for my Mom’s birthday! She loved it, it was delicious! Thank you for the recipe, another one I can check off my list for making homemade! ❤
I didn't have oven safe bowls, so I put the soup in a pyrex dish, bread and cheese, and it turned out just as good (if I do say so myself😊) Simple, easy to follow, easy to make recipe I make every week now 🤗🤗 thanks!

Perfect soup for a cold night in London! Thanks, John! And Happy New Year!
There's a wonderful restaurant we go to for our family special occasions and I always order the French onion soup for my appetizer. Seeing all the time and preparation that goes into it makes me think they must always have some already made in the kitchen because I always get it in about 15 minutes!
Simple, but delicious! It always amazes me that caramelized onions have such in-depth flavor profile!
