This is very much like a flourless chocolate cake. And even though the cottage cheese isn’t blended, it obviously works, just doesn’t look particularly appealing. I would add some chopped pecans or walnuts. Keto butterscotch chips could be nice too. I usually top my keto chocolate cakes with either raspberries or strawberries and whipped cream.
Slightly off topic, but here is a "brain hack" that has started to work for me 2 years into my Ketovore journey.When I get food noise but don't want to eat,I go to the kitchen and cook something that takes 15-20 min.For some reason,after that I don't feel like eating !!.maybe going nose-blind.Anyway this seems to work even though I know I am passifying myself...it works.I eat less,and have ready made stuff when the food window is open.just sayin...and Thanks for being ..both of you!
Made the peanut butter one as a blondie just now but with almond butter powdered vegan egg and egg whites white chocolate. It was divine----you could tell it was a lava cake. Unbelievably easy and delicious! I like powdered egg since I can vary the liquid in it and also feel safer tasting before baking to see if I got the right amount of sweetener. Thank you for posting!

Egg white powder 1.5 teaspoon, Bob's Red Mill vegan egg powder 1.5 teaspoon, water slightly under a tablespoon, 2 tablespoons almond butter, 3/4 cup cottage cheese, 2 tablespoons allulose, 1/4 cup Lily White white chips Nuked on high 90 seconds, did an extra 10 seconds because it was too runny. I tasted the dough before nuking to make sure it was seasoned to my liking.
I love buying cottage cheese when it is on sale, blending it all up and freezing it in the bowl I bought it in. No wasted dishes and ready made to use whenever you need it.
Yes! It's just a mealy texture. I try to avoid using it as much as possible. I use egg whites for pizza crust instead of almond flour because I just couldn't handle the texture.
Yes 👍 to keeping a blended container of cottage cheese in the fridge! I came to that conclusion a while ago. Makes whipping up concoctions using cottage cheese a breeze!
I’ve made it today. I added a little xanthan gum1/8 tsp Also added an eighth of a teaspoon of baking powder and salt Tablespoon of each PB two and regular peanut butter. With a little bit of chopped pecans. The next time we make it i’m going to add vanilla and use half powdered sugar, half granulated sugar from Lecanto spelled, but it’s a Monk fruit brand. I went ahead and blended all my cottage cheese when I got home from the store so it was blended cottage cheese. Anyway, when I added it all up, it’s eight points for Weight Watchers. However, it is a big old serving and I would be satisfied after dinner with half , so I may also look to figure out a way to pre-make a whole bunch of the wedding ingredient and pre-make a whole bunch of the dry ingredient and have the ability to like do like 2 tablespoons of each flip it in there and microwave for 30 seconds to have a quick two point Chocolate cake at the end of the day Thanks.
Mmm I would like to try somewhere to come up with vanilla so no Coco, maybe add vanilla protein powder and some rum flavoring and it could be a rum cake??

Me too! For me, eating a muffin made with almond flour has the same texture ("mealy") as trying out my parent's Bran muffins 😝. I am trying to use coconut flour in place. It is very absorbent, like 1/3 cup = 1 cup of almond flour (so they say). 🐈

Im gonna make the second recipe `and put in 3 Tbl sp of swerve confectioner type.And add a pinch of salt and a dash of vanilla.Then make keto chocolate ganosh with the white chocolate chips ( about a quarter cup Chips of choice and a Tbl spoon of hot heavy cream ) and pour over the top! I don’t think cottage cheeses melts to creates a cheese pull. I think the white stringy thing is from the white chocolate chips being partially melted.

As a chef of 25 years.... they were BOTH missing VANILLA and a tiny pinch of salt. (although the cottage cheese may have added that salt to it). :) Thanks for sharing!
I made the first variation but used 2tbsp Swerve instead of the maple syrup replacement and added some vanilla. It set up very well but I thought the cocoa powder overpowered everything. I would cut that back or I would add more sweetener.

When I think of lava cake I expect a liquid center. This recipe doesn't have that. I can't think of what to add to make the center lava. You may have an idea.
it might be because we used a cooking vessel that was too wide, but the inside was very soft. I think we had put it in a smaller, deeper dish it would have been liquidy
curious, if you know some cheese curds don't get fully blended and end up being stringy then why would it gross you out if you know what it is?...it's cheese....it's no different than seeing cheese hanging from a pizza or macaroni and cheese. ...anyhow, i also use cottage cheese for various desserts. but i also put protein powder in it cause i don't like eating empty calories. lately, i've been adding chia seeds too to cut down on the net carbs...they also work great as an egg substitute.... aside from that, i always throw these in everything for their health properties.... cayenne pepper, turmeric, ginger, nutmeg....either all together, or a combination of 2 of them depending on my mood.
Needs to be much sweeter. I tried someone’s suggestion of cottage cheese ricotta and a little cream cheese. I would double the swerve. I did the peanut butter version and added vanilla.

It got me thinking about what would happen if you combined the cottage cheese ice cream with the hard boiled egg pudding, and then freeze it. I haven't made either of these recipes, but it sounded interesting to me. What do you think?
Have you tried Fiber Gourmet Flour? My husband and I do dirty keto and I use this to replace regular white flour. It has 81% less net carbs and 55% less calories than regular white flour. I made the best instant pot chocolate cake using this flour and my other favorite sugar free ingredients. My son who is also doing keto said "you must be tricking me. This can't be lower carb". He is stricter on his carb intake but he treats himself every now and again.

Yes! Salt is essential for full flavor, to bring out the sweet. And vanilla makes it way cozier as well!
Cottage cheese is chock full of salt. IMHO, no added salt is needed.
