I recently had a desert made of cottage cheese and Jello that was really good and it's so easy! Take a whole 16 oz container of cottage cheese and blend it smooth. Get sugar free Jello 0.3 oz size any flavor, but lemon is the best. Heat 2/3 cup of water in large bowl or mold. Add Jello and mix until Jello is dissolved. Let it cool just a bit then stir in cottage cheese. Refrigerate until firm about an hour or so then enjoy! This recipe was given to me by an 80 year old lady who said her mother made it quite often so it's an old recipe!
My mom used to make that, but instead of cottage cheese, she used coolwhip. She called it jello fluff, lol! I may have to make this with the CC, of course!
Lemon zest with sugarless lemon marmalade. Almond slivers with almond extract.. Dessicated coconut with almond slivers or pine nuts... dried cranberry... are yummy combos too
I've made this recipe twice now. I made the thumbprint cookies with apple butter in the center and they were fantastic. Today, I made chocolate chip cookies and my boyfriend ate half the batch and he rarely ever eats that much. This one is a keeper. Thanks, ladies!

I have been making the cottage cheese "potato" chips every other day and can't get enough of them. You both inspire me to get back on track with Keto and intermittent fasting. I have been on Keto off and on for almost two years now. I am 5'1" and started at 220 lbs. and am now at 191 lbs. The thing that made me want to subscribe to you is how down-to-earth and sincere you are. (not to mention intelligent, beautiful, funny, kind...omg I swore I wouldn't gush) The easy recipes are helping me to stick with the diet for longer periods of time. I made the thumbprint ones today, they turned out amazingly tasty! Very soft and cloudy, almost! Didn’t have vanilla protein powder on hand but had some strawberry one left over from when my daughter used to make smoothies, worked out great, gave cookies a bit of strawberry flavor!! The jam cookies look yummy. The biscuits were called strawberry whirls in my town. 😂 maybe roast the Macadamias first to get a flavour, that may give it a nutty taste. Such an easy recipe..I need to try it.
You ladies knocked it out of the park with this one! My husband said, “ best keto cookie “ these have always been my favorite Christmas cookies, I make them every year. The only thing I did different from your recipe is ; I sprinkled chopped walnuts on top then pressed the thumbprint on them. When they came out of the oven I pressed a spoon on top, since the print had disappeared, the cookies were warm it left a nice divet! (The walnuts are in my original recipe)❤
Going to try this base with my own jam...frozen fruit heated up with chia seeds to thicken and a bit of sugar substitute if needed. I use this on a keto cheese cake as well. My favorite is strawberry & rhubarb. Thx
100% agree on the taste of coconut oil in foods. Love its taste on its own, and I'm okay with it in rice or salads; it's good to fry things on, but that's about it for me. Can't get over the sour aftertaste it leaves. Love that you guys creatively interpret recipes instead of just folowing them blindly
I’m loving all the cottage cheese recipes. I have to buy the lactose free cottage cheese but that’s no problem. I see others are making Avocado bread, etc. I’m not a fan of plain Avocado but would try them in more recipes.😊

Wonder if we could substitute the almond flour for other nut flours?!! Also, I think yours might have been over baked. Maybe your oven runs hot. Im gonna be trying those today !! So excited! I find when I blend the cottage cheese it can become more wet then unblended so I usually do have to strain it or add more flour. Im going to try this with oatmeal flour and see how that works. Another Great video thanks ladies!!
I just bought some of the WALDEN zero carb zero cal "fruit" spread today. It's sorta like fruity gelatin. It should work nicely in the thumbprint cookies!!
I would like to see the keto world perfect the use of psyllium husk in recipes. Sugar Free Londoner seems to use it a bit in her bread-like doughs. I recently found out that an acid prevents psyllium from turning a purple or gray color when using. Lactic acid has been recommended but I use a sugar free rice vinegar because it doesn’t have much of any flavor.
How about homemade egg whites powder? I got six cartons of egg whites from Costco and I'm going to whip them to meringue consistency and dry, then grind to a powder. Way cheaper than trying to purchase egg whites powder in Canada.

I'ma weakling. To open jars, I use a church key can opener. I put the point under the jar edge and barely push it down on the handle. It doesn't take very much pressure and the vacuum seal pops open. I had a frozen shoulder once and this was the only way I could open jars. Well, that or wait until hubby got home from work 😂
These look delicious, and I’m definitely going to try them. I’m wondering if you guys have tried Pompeii brand “BAKE” olive oil? I get it on Amazon and it’s pretty reasonably priced. It has no olive oil flavor and it’s amazing to use in baked goods and in place of any other butter or oil. Like you, I don’t like the taste of coconut oil in the things that I make, and I’ve been using the BAKE olive oil for over a year now. It gives a really nice moistness and richness just like butter would. Another nice thing is that it is a healthy option for people watching their heart health and cholesterol!

Refined coconut oil doesn't have such a strong scent/flavor.
But, I'm pretty sure I would use butter. I like butter.

It would help a lot if you use a round scooper, you can spray it with butter and your cookies would come out nice and round
Next time you need to open a jar put a spoon underneath the lip on the lid and lift to release the seal. Works every time 😊

Put the mixture in the refrigerator for 15 min, because of the butter it will harden and be easier to mold into cookies.

Some people are mentioning that there are some varieties with no taste, we will have to buy some to try it out.

Try unflavored coconut oil. It make a huge difference. I’ve used it for so much.

If you purchase a piece of non skid material you can use a piece as a jar opener.
I’ve always put cookie batter in the frig to firm up before baking.

Putting a rubber band around the cap works. too. It takes Iess strength with a better grip.

If you make these cookies again, and you want to try and make the bottom less dark, try begging the cookies in the middle of the oven

You can get refined coconut oil that doesn’t have the coconut taste.
I wonder if using butter had the hardening effect on the cookie instead of using the coconut oil? Perhaps using ghee instead?
