Ingredients:
Dough:
930g flour
300g honey
300g sugar
200g butter
1 1/2 tsp baking soda
4 eggs
Cream:
300 ml whipping cream
800 g sour cream
250g powdered sugar
2 tsp vanilla essence
50 g chocolate
40 ml whipping cream
fresh strawberries and blueberries
mint leaves
Directions:
1. Add the butter, sugar, and honey, to a pan. Put the pan on medium heat and mix to melt all the ingredients. Add the baking soda, and mix until golden brown. The mixture will grow and will be foamy. Let the mixture cool.
2. When the mixture will be warm add the egg and mix.
3. Gradually add the flour and form the dough.
4. Cut the dough into 13-15 pieces and roll them out with a rolling pin. Form 24 cm sheets. Bake them at 180C for about 4-5 minutes or until golden brown. Let them cool.
5. In a bowl mix the cream cheese, powdered sugar, vanilla, and whipping cream. When firm peaks add the sour cream and mix just to combine all the ingredients.
6. Assemble the cake. Put the cake in the fridge for a minimum of 6 hours. The longer it stays in the fridge, the softer it will be.
7. Add the hot whipping cream over the chocolate, and mix until melts. Use the chocolate to decorate the cake.
8. Decorate the cake with fresh blueberries, strawberries, and mint leaves.
