Manam was an excellent choice. Glad you got them to experience authentic Filipino cuisine. As sinigang is your "ultimate favorite" Legendary Super Saiyan dish, perhaps you could explore different regional variations of the dish, like "Sinigang sa Mangga" and "Sinigang sa Karmay" on a food expedition series (which you kind of hinted at here). "Sinigang sa Batwan" is my personal favorite from the Visayas region, but I'd be interested to hear which version you enjoy the most.

Kudos to you, Jessica 👍🏻👍🏻👍🏻 Here in Belgium and France, it is customary for all types of gender (be it woman-to-man, woman-to-woman or man-to-man) to do a "beso" usually done cheek-to-cheek, not with your lips. The proper "beso" is done 3x but I do it 2x only, one on each cheek. If both men do it, it is a sign of respect and brotherhood including close family ties.
One of the last things Anthony Bourdain wrote before he died was that sisig was going to be "the next big food" in the United States. Sisig is mind blowingly good. Very different, very tasty. As for the garlic rice, part of the reason of the use of vinegar in Filipino food is because they love garlic in a lot of dishes. Vinegar helps cut the richness of the garlic and allow you to keep eating it without it becoming too much. It sounds weird, but vinegar and garlic is an awesome combo, as is simple chopped onion in vinegar for a dipping sauce.

The coldest place in PH is actually not Baguio but it is the most modern of the colder places. Sagada is colder I think. Philippines and Korea should really do cultural exchanges more often. While Filipinos are more adventurous in terms of taste, I am glad that Koreans in general are slowly opening up on new tastes.
You should try the different variations of sinigang using different pampaasim. There are: tamarinds, mangga, bayabas, santol, miso, etc. And I like them all. My favorite is maya-maya or salmon head sinigang sa miso. And some regions of 'pinas would also have their own versions.

Beso beso is mostly done by well off/ rich families who have spanish ancestry or were atleast were filipinos who are well off sincr spanish time. Most common people dont do beso beso though. Most rich Filipino-Chinese also adpated it to their culture. Its only common to certain types of families or groups in society. But any filipino can do it though, and would not mind doing it even if there are not used on doing it.

Baguio’s temp can actually go down til 10 degree celcius or maybe lower any time from December til February.
sometimes 12 degrees c*, in sagada it can go like 3 degrees. good time to trek pulag :)

Try going Tagaytay City. It is cold there also. Lots of good food specially Bulalo, Sili (CHILI) Flavored Ice Cream, Buko Pie while eating with the clouds coming in. Hope you will see Tagaytay City someday.

The local sisig seller i got here sells sisig made out of lechon kawali/bagnet
