Hi Boun, did you mean the round cake pans in the video? I do not own letter shaped pans, I will often carve the shapes I need into the cake. Pans I source from a range of online cake decorator suppliers such as the Cake Decorating Company, Cake Stuff or Vanilla Valley. I will be doing a video soon of my favourtite cake pan brands and other equipment I swear by, so watch out for that!
Do you have to grease the cake pan completely under the parchment and then you aren’t supposed to spray/grease the parchment at all? Totally backwards from what I was always taught.

Yes oil will work.

Just grease the pan. Then use the parchment to cover the base and sides. The greased pan will help the paper adhere to the pan :)
