Great Video ! I guess it wasn't necessary to convert original curves to SubD compatible. Is there a video to show when you need to use this command ?

good questions. I found it hard to know exact when and what situation to convert or not. I just try it and if it doesn't work. then convert it. ^_^

Do you know why I don't have "expand edges" command in my Rhino7 SubD tools??

you can try to type in SubDExpendEdge in the command bar. if you still not see it, please contact the Rhino support. that may be just a bug.
