    I have always done this when making potato salad with small new potatoes. I then put the peeled potato into an egg slicer and the results look good in a salad. Be aware though, not all types of potato shed their skins so readily... some skins tend to cling to the potato and you end up tearing off the skin bit by tedious bit!

    One thing to clarify here. The potatoes shouldn't be boiled for long time at first. It should be just long enough to soften the skin and underneath surface. I assume this should take about 3-5 min in boiling water. Note that the rest of the potato is still pretty raw and hard. Yet, this might not be perfect for fried chips.
    You could do a similar technique to peel tomatoes by cutting a skin-deep cross 'X' at the bottom of the tomatoes, drop them n boiling water for 1-2 min then transfer them into cold water. Then you can easily and quickly peel the skin off.
    If you master the technique, you should be able to peel a very thin skin without any tomato pulp lost.

      WRONG, for flavor it is best to cook until done, then peel. Done under cold water you won't burn your hands and the potato stays hot inside or just use dish washing gloves.

    I just tried this with some large(not huge or anything) Yukons and it was a total waste. I didn’t over cook them. They were slightly underdone because I was going to try them in stew. But the skins did not come off cleanly and I lost a fair amount of potato that was stuck to the skin. (They were not in any way still raw). I doubt I’ll do this again. Maybe it will work for others though.

    This is suboptimal for most potato dishes, EXCEPT for mashed potatoes, where you already have to boil them and drain the water first anyways, and in this case it's doubly good cause you get the whole potato instead of a potato that's been a bit shaved down. Really cool trick.

  • @j7ndominica051
    @j7ndominica051 3 ปีที่แล้ว

    It works, although I need to help it with a dull knife on imperfections. Boiling with a skin is a good method for a potato salad. For normal meals they should not be chilled to be served with butter whole or in a mash, and look better soft and fluffy. But if there is a problem, such as injured hands and lack of gloves, this will do.

You know.. the ones with "boobs" we used to laugh at as kids...or adults.. take your pick.

      You can't use unpeeled potatoes for potato cutlets. Not every potato food can be done with peels...

    • @dexter131
      @dexter131 4 ปีที่แล้ว

      @@jaein91 you can use unpeeled potatoes if you can cook without following directions specifically.. there's no reason you can't leave the skin on for cutlets, other than the recipe says to peel them.. call your potatoe cutlets with the skin homestyle fries. I was merely stating not peeling potatoes is always easier then peeling them, not to mention the skin is about the only thing that makes a potato good for you.

      @@garethelwig2395 maybe im just too lazy to peel the potatoes, no matter how easy the trick makes it..

    • @jaein91
      @jaein91 4 ปีที่แล้ว +3

      @@dexter131 I don't think you know what a potato cutlet is and how peels can seriously impact the taste and texture. I just don't get why you think one size fits all. There are different ways of preparing potatoes for different recipes worldwide and if this doesn't fit you then move on.

      I read where others have been saying 12-15 minutes, but I just read where 3-5 minutes is how long to shoot for. You want the skin and the surface just underneath to be soft, while the rest of the potato is generally hard and raw. However, if you're going to make mashed potatoes, I don't see why you wouldn't just cook them for 12-15 minutes anyway and get the cooking and the peeling parts knocked out in basically one step!

      For me, I do it for about 20 min. or more depending on the radius and size of the potatoes. The bigger they are, the slower they take to become soft and boiled, so, I just chop them down into halves or quarters and put em alongside with the smaller potatoes to speed up the process.

    No professional chef would consider doing that, because regardless of nutrients washed out by the boiling water directly reaching the potato under the skin, it will likewise decrease the taste of the potato.

    I just cut them in halves, skin on and roast them as they are.
    Cannot understand why anyone would do anything different. ???

    I cut potatoes into pieces, and boil them. When they’re done, I put them through the ricer. The ricer squashes the potato and leaves the peel behind! I have always loved my potato ricer. I wouldn't be without one! I have one that's almost 200 years old! LOL. It's been through 3 generations! I tried your method and the peels kept breaking, not coming off in a large piece , AND the potatoes weren't cooked through. I was very disappointed. I was hoping to use this when making my potatoes for potato salad. More work than it appears to be. Maybe I need to buy a different type of potato.
