- Vanilla eclair recipe you will never regret if you taste it
(Please preheat the oven in advance)
*material
90g soft flour
68 g butter
75 g of water
75 g milk
12 g sugar
2 g salt
125 g eggs
*Custard Cream
6 egg yolks
90 g sugar
2 g vanilla extract
20g soft flour
12 g corn starch
420g milk
60g fresh cream
Vanilla Bean 8cm
22 g butter
0.5 g salt

190 degrees 20 minutes preheat
185 degrees 17 minutes 170 degrees 23 minutes (total bake 40 minutes)

Looks delicious. I'm not familiar with the term "soft flour." Please explain that term. I look forward to making these. Can I substitute plain gelatin for eggs in the custard? I have allergies to so much egg products.
It is the flour for the cake, and the custard must contain eggs.
You can use whipping cream and vanilla instant pudding mix.just beat it together and fill the eclairs.
You can do some changes, it might not be the same but it'll still taste good
