    Incredible! I love that the owner takes care of the staff by feeding them and working to ensure they’re paid on time. I am so appreciative of those who take time to care where it matters, not where they feel good, but where it is right for the staff.

    I've worked with someone who is extremely similar to Sensei haha. An older man from the Balkans who works as a head chef for his own restaurant. He seems just as carefree and knowledgeable as Sensei and most of all ALWAYS gave me so much advice about all sorts of things in life, lol. It's nice to know that this kind of personality exists elsewhere in the world too.

    This might be my favorite video you've ever done and I have seen many of them. Really enjoyed this. The chef was quite a character, but seeing real, normal restaurants like this is a lot of fun.     LOVE love love this new series! The mom and pop restaurants, old cafes, and grungy hang out spots were some of my best experiences in Japan. Cities like Tokyo can be overwhelming so these were great places to relax, drink, write, eat, listen to jazz music, read, smoke, chat with locals and fellow travelers, and take it easy. One ramen shop near my hotel I went to so much they thought I lived in the neighborhood lol. I loved watching the customers and the old men in kitchen; the pace, rhythm, and flow of running a shop. I hope they are still there when I return ❤ Great Job Paolo

    I was a bit shocked to see how messy the kitchen was - i am sure the food taste amazing, but the kitchen should be cleaned so the salat wasn’t leaning up against dirty wall tiles

      Yeah, that place was filthy and broken. Had that been in EU or US it would have been closed down long ago.
      And it sounds like a pretty busy place, so he should have the income to renovate it and maybe hire a cleaner that can come in after every shift.

    I would love to see Day in life of a Vet !!! I am intrigued to see the variety of pets you have, also laws, restrictions etc. Ohh also maybe a zookeeper or a local farmer with horses and cows and goats lol. Can you tell I love animals ! Maybe Wolfie when he is older you can get a family pet.

    I really like his attitude. The act of drinking in the kitchen is considered wrong in some places but for me, i like that. But for some serious things like hygiene and cleanliness of the place that has to be serious because you are dealing with food

    The chef/owner is quite a character, and it shows through his shop too. Allowing some mass, worn out equipments, grease slabs n mouldy surface but he got his eyes on the goal - affordable good food. Good on him

      Really ? you could not have been trained in Europe this is a classic method of making Beurre Manie which is used to thicken but here its on a larger scale ! Check Larosse Gastronomique or any classic French Chef !

      agreed this is an uncooked roux...which, thinking about it, I'm not apposed to. It is a good quick fix thickener but also not bechamel cuz no dairy. I'm very curious what a restaurant that small needs that much preped thickener for?

    Love this video, can't wait to be there! When I was in Japan I find a very nice small shop in Kyoto near to the temple on the uphill part, the owners were so nice, I really wish I can speak Japanese they treat me very well and were so nice, even offer me their own special Sake (the one that they drink, is not for sell) I still remember that as one of my nicest nights in Japan. The food was amazing too, and they let me record a lot of footage.
