Most double barrel have automatic safeties. Even my 1924 Ithaca Flues 12ga double had the automatic safety. It's like that for a good reason. It is possible that upon closing the gun, the trigger sear can slip and fire a round. Hence why the safety activates when you break the action.
I don't know what's with so many people and how they think it's too much trouble to push the safety forward with your thumb, It's a lot faster than saying, "Stop or I'll shoot", which is really in bad taste if you don't at least offer them that warning. Oh, and yes, I do know, I've got the Boito which is made in the same factory as the Stoeger with the same safety.........0.05 of a second isn't much time to push a safety off but it maybe an eternity when deciding whether or not to turn the person in front of you into Swiss cheese and living with that on your conscience for the rest of your life when you could have diffuse a situation without painting everything with that person's insides. You might be surprised how complaint people are when looking down the barrels of a side by side 12 gauge.

It's not disabling the safety. The safety still functions perfectly when using it manually. It's disabling the automatic safety which is, at best, grossly inconvenient, or at worst, life threatening. While someone probably shouldn't use a coach gun as a self defense tool, having a safety that automatically flips itself on when loading the gun could leave you unprotected if you didn't hammer in some additional training for this gun's wonky manual of arms. There's a reason why VERY VERY few guns have automatic safeties still, because it's obsolete and unnecessary.

They do. I’ve ordered mine but it’s not here yet. However, I’ve read around on forums and a lot of people have used them to hunt pheasant, rabbit, turkey. With the right loads, would probably be okay for deer and pigs at closer ranges...as a sort of brush gun.
It really was a VERY simple operation to disable the automatic safety. Took literally 5 minutes with a dremel tool and has zero detrimental effects on the gun. I'd certainly look into it for yours.

It doesn't take much mental capacity to train yourself to disengage the safety when ready to fire. No way I'd try to disable the safety on that gun.

You think the chokes on these barrels keep a tight enough group of birdshot to take out some doves/quails?

Right barrel from factory..IC......left barrel...mod.....you can buy different chokes..I got 2 IC in mine so I can fire anything...
Unfortunately, the cheapest Stoeger like this one doesn't have interchangeable chokes.
You can change out and get different chokes.
Not on this specific model, the chokes are fixed. The nicer model does have threaded chokes.
