@@miaminoah9430 That is why you SALT THEM in the beginning, and let the water come out for about an 45 mins to an hour. You can also take out the center part of the cucumber where the seeds are and have less water. You can also lightly squeeze the cucumber to let more liquid to come out. IT is ok to have some liquid after you make the cucumber kimchi. As it ages, more water will come out until no more water can be let out.
There’s different types& manyyy different recipes. I made one I really like but I wish I salted the cabbage longer… I can’t have fish so I can’t eat any with fish sauce. There’s northern and southern kind I think & one has fish lol.
Start by cutting Cucumber in preferred slices (add sea salt to draw out extra water). For kimchi paste: Gorchgaruh (?) Fish sauce, Sugar, Minced Garlic, Ginger Grated Apple & Onion. Drained the cucumber and add carrots and chives tossing together. Next add the kimchi paste. Let it marinate if you want and adjust kimchi accordingly. Enjoy! Thank you for teaching us how to make this. Looking forward to trying this 😍
The thing I love about kimchi is that you don't need to dry the ingredients in the sun for days which is done is aachaar....you can just make kimchi and eat right away
I love kimchi I had a Korean friend, who had some she brought to the states. It stinks but it was damn good. And I had the dried seaweed with it. ❤️ ❤️
This one truly is a great recipe. Ive tasted some different store bought ones and this recipe was similar to one I tried a long time ago but could never find back! I adjusted the ingredients a bit to fit my taste but other than that its a perfect side dish!
Do you not wash the salt off the cukes after drawing out the moisture? Not criticizing, genuinely curious before I attempt this, because rinsing the cukes is a step i hate.
Here in Hungary, kimchi is not something you can stumble into that easily (at least not outside the capitol city). I only had a store bought, altought nice quality jar of kimchi once before, but craving the taste ever since.. so I decided that I'll make it to myself! My question is: gochugaru is a must have type of paprika, right? Can it be subbed to achieve the real taste..?
So I made Kimchi out of cabbage since I can’t find Napa cabbage near me… I fermented it for 3 days. Then I read online that some people don’t even do that… I want it for the good microbes. Do you ferment your cabbage kimchi ?
can anyone here tell me what is the red color he mix what is the name of it in english term and where to buy this, is it available in any grocery store or super markets?
We E. Indians make a pickle instead, a simple one is sliced cucumbers, carrots & either sweet green peppers(less spicy) or green chilli peppers(pretty spicy), add oil, salt, crushed garlic & a dash turmeric powder, mix & U can eat with flatbread, pilaf rice or simply a side to any curry/rice dish & is very nutritious overall!!!!!
I made this with what I had on hand and finished it so quickly! I ran to the store to get more cucumbers! This is the perfect summer side!
Isn't this become watery after a couple of hours 😢
@@miaminoah9430that’s why you draw out the water i think
Ah yes, rotten cucumbers

Kimchi has been an acquired taste for me so I've been trying some different store bought ones. This looks so delicious though
You can make it with cucumber, white radish (Korean/ Japanese radish or Mooli), beetroot or even rainbow greens ❤
I just love homemade kimchi
I can regulate the chilli and salt
Add roasted sesame seeds to each serving.
Yum.
Looks delicious ingredients pls.

Gochugaru = Korean red chili powder for kimchi
I have a question.. since I’m adding Apple why should I add sugar? Isn’t that unnecessary?
Mahalo for typing it. ❤
is it ok any chilli powder?@@lyzasusi8267
@@lyzasusi8267is it peper powder or something else?
Great recipe! 2 hours of fermenting is definitely not long enough for me, England is quite cold, so I ferment mine for days 😊

So we don't need to wash the cucumber after it was left with salt & drain the water from the cucumber??
Ngl ur so handsome, and u cooking makes u attractive lol
Idk mine turned super sour within one day. Maybe the temperature is the reason. Btw I m from india

Don't have two ingredients...fish sauce and sea salt, I'm here only with Himalayan salt and soya sauce
This looks good. But I was wondering do you have a recipe for atchara?
Edited -> achara to atchara
Achara is an Indian stuff.
@abbia1979 Ah, I misspelled it. I was referring to atchara. Which is a pickled dish from the Philippines.😅
en.m.wikipedia.org/wiki/Atchara

How long will it last in the refrigerator?

It's different from paprika powder. I also live in Europe, and here is the Asian market. You have to find and buy red pepper powder there.
For how many days I can ferment it?
So I made Kimchi out of cabbage since I can’t find Napa cabbage near me… I fermented it for 3 days. Then I read online that some people don’t even do that… I want it for the good microbes. Do you ferment your cabbage kimchi ?
I made this and its too salty. If u wanna try it, add rice vinegar and adjust salt
Did you rinse the cucumber in fresh water after the salt soak ?
Can we make this with Gochujang instead?
What can substitute the fish sauce with ???
Soja sauce
Do you wash the cucumbers after you have drained the cucumbers juice?
Once fermented, how many days, weeks or months can you keep it in the refrigerator? Thank you.
Kimchi can last years if well preserved in the right condition.
@@MenuMcBlue
But not cucumbers.
Radish or cabbage yes.
It lasts for years, if not gone bad, trust me I am korean.
😋 yum yummy 😋 😍
Fermentation can not happen in couple of hours...
Aachar hai yr ye toh 😂😂
I don’t add fish sauce to my kimchi 😋
Is there any vegan way to make kimchi? .... please reply
It's already vegan though?
How long is the shelf life once fermented?
One night (4 to 5 hours) 😊
Don't you rinse the salt of?
most likely he did yea
How long do you set aside the cucumbers with sea salt to draw out the water?
20-30 minutes in my opinion
Can I skip fish sauce??
Yes, substitute with soy sauce, many people do.
can anyone here tell me what is the red color he mix what is the name of it in english term and where to buy this, is it available in any grocery store or super markets?
Gochugaru
Gochugaru which is dried red chilis
Is fish sauce important in kimchi and what is the fist ingredient
I wonder how kimchi pickles would taste
can you use kosher salt to draw out water?
I believe you can use kosher or sea salt :)
Definitely
Yummy 😋
Drop the recipe pleased
That's a spicy salad, not kimchi. If it's not fermented, it's not kimchi
We call it sobagi, not kimchi in Korean 😅
What if we don't have fish sauce?
You can use soysauce instead 😀
What can I substitute for fish sauce?
Soy sauce.

Is it ok not to add fish sauce
Does it need to go in the fridge?
Yes
