Yindia Maharashtrian food. What you guys tasted was North Indian food. Each region in India has different food culture.
Masala dosa, Amboli, Puran poli, Kalakand, Gulab Jamun, BHEL, Bhelpuri, Badam shake, Kaju shake, Paper dosa, Shabudanawada, rasam rice, pedha, milk cake, mix chiwada etc.

One more reason Indian people pour tea in saucer is - if some buddy comes up while you are drinking tea , you can offer tea in your cup .....
The people don't understand the difference between hot & spicy(spices in this case) when it comes to Indian food(cuisine).
Try some thali meals.like Gujarati thali , Rajasthan I thali, the.maharastrian thali Punjab I , Sindhi , on and on .
Thali is closest to home food , hence easily digested. The restaurant food though being similar it is made rich with lots cashews, spices , butter etc therefore not easily digested
And more expensive.
Almost all regions have Their respective home type meals easy on easy on stomach and pocket.
They are across main cities in India .they mainly called mess type or bhojanalay for example rajastani, Gujarati or mahastrian bhojanalay and south Indian is usually called Andra meals mess or Karnataka, Tamil Nadu ...
They simple in decor , low on spices and cost high on hygiene and home type taste.
