    Preheat Oven to 350 degrees
Souffle will cook 30 to 10 minutes
Calls for 8 x 8 cooking dish ( I used a clear, glass, pie pan, you can use whatever you have)
    Sweet Potato Souffle
    4 medium sweet potatoes
    1/4 cup of granulated sugar
    1/4 cup brown sugar
1/2 cup of mile, cream or half and half
    1 large eggs
    4 tablespoons unsalted butter
1 1/2 teaspoons of vanilla extract
    1/2 teaspoon of salt
1 Graham Cracker Crust (Optional) if you do not want to use the crust just put Souffle in baking pan and put on toppings
Boil Potatoes ( I boil mine with the skin on and then peel them but you can peel them first if you like)
After potatoes have boiled, mash them in a bowl and then add the rest of the ingredients, blend together ( you can stir or use a cake mixer)
After ingredients are blended together, pour batter into your baking dish and then make topping
    Topping
1 cup packed light brown sugar
1/2 cup of all purpose flour
    4 tablespoons unsalted butter
    1/2 teaspoon ground cinnamon
    2 pinches of salt
1/2 cup of pecans ( optional but good if you like pecans)
    4 tablespoons unsalted butter
Melt butter and combine all topping ingredients
After combining ingredients, place the topping on top of souffle, make sure to spread it all over
The consistency will feel like a dough
Bake at 350 degrees for 30 to 40 minutes
