    Love baked Alaska. My husband did the flambe method and set a cupboard on fire. Interesting way to end a meal but it tasted okay after all the excitement was over. Lol.

      It's awesome you have a helpful hubby as appositive, I'm sorry about the damage. I used to work in restaurants and bakeries so I know all about flambing, I used to also have to work Cowboy crank grills so a lot of open flames. I've seen some people lose eyebrows and arm hair! One person was chopping something and not paying attention talking to somebody and they cut like half inch of the tip of their finger off and it's spurt blood around the whole kitchen everything had to be just shut down and cleaned, he got taken to the hospital and they at were able to reattach his finger tip.

    My dad used to make this in his restaurant back in the 70's. He would bring it out to the table and flambe it. Never got old. Awesome dessert.

    I worked in a restaurant in the mid to late 60’s and this was their specialty dessert! It was so fun to make 5-10 of these depending on the day of the week or weekend. Your recipe did not call for drizzles of Hot Fudge (not chocolate) which makes this so rich! 🤤

      How does the pound cake hold up here...It's frozen solid and there's not much time between it's time in the freezer and eating it...?

    I've made this many times. I've used a brownie base, too. I don't freeze the cake part, instead turning the frozen ice cream out onto the cake or brownie base. This makes cutting easier. I do pop mine into the oven. It's been a family favorite for decades.

    Thank you for posting this! Growing up, my Grandma made this for my birthday a couple different times. As a kid, nothing more exciting than seeing your birthday cake on fire (flambe`) and then digging into some ice cream and cake heaven. I'm told the recipe is "old fashioned", so glad to see it today and hope it sparks some great memories for many others as it did for me.

    When I was a kid in the ‘60s my mother had the brainstorm to make a baked Alaska, flambé style, for Sunday supper dessert. I’ll never forget how stressed out she was, between getting the steps done quickly and the expectation of possibly setting the dining table on fire. Lol It turned out great but she was totally anxiety ridden and never did it again!

    I'd never had baked Alaska and only heard of it recently. After watching your video I decided to try. I had to play your video a few times over while in the kitchen, you were my guide! I made this last night and it was great!

    Flambée is missing…as a kid I was always hugely impressed with burning ice cream at a restaurant and insistent to have when listed on the menu..a real classic! Nice job

    John - okay, you need to tell Brian to try Tillamook mint choc chip ice cream. It's available in CT supermarkets (I get it in Oxford, CT). And the Baked Alaska looks amazing - thank you so much for this. I have spent many happy hours this past year watching your Preppy Kitchen videos.     I’m thinking this could work well as individual servings. It would make it easier to manage and could be great for if you have non-dairy family members. You could just scoop and re-freeze on a cookie sheet but if you want to go with the bowl method use small glass bowls.

      You could always scale down the recipe and use a smaller bowl. You’re definitely right, this would work much better in smaller, individual servings.

    Hey, working in a bakery at an early age then later in commercial baking...I worked in pie manufacturing.. One day I fiddled around with merengue peaking... i found that if you used your fingers to sorta manipulate it, the peaks are more abundant and easier to toast. After i did that, the factory offered it to various restaurants and found they actually sold more.. so they made a point to learn what i did before i left. I was 14 when I first started in Vegas over holiday season. Yes i was paid... plus I met Arnold Schwarzenegger.. lol. Well that was later after i returned. No biggy.. the pie bakery was a restaurant up front.. like a Marie Calendars but actually had a bakery.. the company i worked for yrs later actually made pies for them too...along with others. Anyhow....
    You don't need to touch more then the skin of the meringue once put on.. maybe a touch of massage but you can see by how it moved or peaked. Oddly the more you work it, it literally stiffened up and looked way cool.. then tipped a few spots to try and make it look evenly distributed... just like doing floral art... a mess persay but an organized mess... lol..

    My grandmother had one for my grandfather back in the early 80’s. I remember her saying that she had to take the ice cream out of the oven and thinking that it was hilarious!

    If you worry about the raw egg whites, you could use Swiss or Italian meringue, right? The egg gets cooked in those.

    I think i remember these with pineapple chunks, rum and coconut or banana cream. Something like that. Its a very old 20s recipe. Must look it up.

      You can use fabric. A thin dish towel or a small tablecloth.

    Just cut pound cake to size you want, have the meringue prepared put pound cake on a baking sheet take icecream out on freezer put on pound cake cover with meringue put in oven or use a blowtorch to brown meringue. Btw my gran n mom did this for years

    I don't have a kitchen torch, so the only way I've ever made it was under the broiler. It was fine, you just have to watch it closely.

    Can this be layered in a springform pan because I think that would make it easier to unmold when time to coat with meringue and spring forms can take heat.
