Are we supposed to stir the caramel sauce the entire time we are bringing to 240 degrees? Or just stir till butter melted and stop allowing sauce to heat to 240 degrees without disturbing?
Excellent question! The latter is the correct method. Stir till the butter is melted making sure there are no sugar crystals stuck on the side of the pan and then allow the caramel to come to 240 degrees without stirring. I hope that helps, and do let me know how your family likes it!
