INGREDIENTS:
Pasta:
2 cups bread flour or 00 flour
1/2 cup cold water
2 tbsp olive oil
4 egg yolks
1 tsp truffle oil (optional)
pinch of salt
Cream Sauce:
1 cup cream
2 tbsp minced onions
3-4 tbsp shaved parmesan
2 tbsp butter

I found a white truffle under my oak tree 2 days ago, I did not know what it was, it sat on a fence post for a day then a cow knocked it on to the ground and I thought I better do a bit of research, so I will be having white truffles for breakfast tomorrow. Sure glad the cow didn't eat it.

I had something very similar at a wedding in Italy a few months ago, easily the best pasta dish that I've had the pleasure to taste in my life. I've made something similar with porcini mushrooms and it's amazing dish as well (not to mention that it's considerably cheaper), but man, truffles just elevate that to a whole new level.

The way I was taught to make pasta was with the same well of flour but I only used one egg and enough warm water to bring it together. My pasta is more white that your dough is but leaves me with a springy pasta at the end with a very interesting texture. The texture isn't bad it just its the same as most pasta.

I just made this but with a different sauce (carbonara) and let me tell you that the pasta cooked so quickly and was absolutely delicious! The pasta recipie is a keeper in my cookbook, thank you so much 😊

I love truffle it's so unique . I know you go for an super clean look on your food but if you had taken you pasta and folded it back on its self then turned it 90° you could have made it pretty straight edged from the start .. I only say this because you could of have like 3 or 4 mouthfuls off pasta that way 😉

I think it better to use semolina instead of flour. I used to make 10kg a day of fresh pasta and the secret was semolina instead of flour. The texture will be awsome.. thanks and keep it up
