as an australian who has been watching Josh and Ollie try foods of different countries, i feel extremely strange watching them try something for the first time which is so familiar to me 😭
The battered fish that you had was called a beer batter. If the batter is made correctly and the oil is hot enough it make a seal when it is cooked, which make it less oily because the oil is kept our from the insides.
The difference between deep fried crispy goodness and deep fried soggy greasy yuck is simple.... the TEMPERATURE of the oil. If the oil isn't heated hot enough you get that soggy/oily effect from the food once it's (not) cooked. Of course, a good oil helps too. Love the video... I live one suburb away and didn't know this place was there. My next lunchtime will be spent here for sure!

You know when you buy fish and chips, and you get those rare translucent looking chips that when you bite into them just explode of crunchiness in your mouth. Yes those are the BEST ones.
I'm an Australian and I've tried fish and chips all over the UK during three diffrent holidays. I've had some excellent home made style chips in the UK and some perfectly cooked fish. However, the quality of the fish is what lets it down. In Australia there seems to be many more choices when it comes to fish and the fish is generally a much better quality. So overall I agree with you.
I did have a bit of a lol at the "fresh" statements regarding the Hoki and Hake, as these are normally imported frozen. The local fisho does Spanish Mackeral, Nannygai and Coral Trout - those are definitely local and fresh!
(My theory) the problem with englands fish snd chips is they use the wrong temperature to fry in and the oil ends up soaked into the food. Either that it its just what you get from using lard.
I’d have to agree, best temp to deep fry is 175 deg Celsius or higher, you need to seal the food before it cooks or else the food absorbs the oil while cooking. The worst time to order fish n chips is when it’s not busy, check out how they leave the temps down low and as soon as you’ve placed your order they turn the temp up to cook your food.
@@Mazzamataz1 The best. Also fish and chip shops owned by Greeks are the best, as they still make their own chips as opposed to buying bags of frozen chips. I hate chicken salt too!
Chicken salt is essentially the seasoning for rotisserie chicken with some crushed chicken bullion cubes in it. I was living in Singapore and had to have a specialist knee surgery that could only be done by a famous surgeon in Sydney. His requirement to do the surgery was I had to do two weeks of rehab with his physio. So I was in Sydney for 3 weeks and discovered: 1) the best coffee I have ever had, 2) I love vegemite on toast, 3) chips with chicken salt, 4) beetroot on burgers and 5) golden gaytime. (I already knew about Tim Tams).
I find it hilarious that you guys said that you don’t usually have chips and chicken when here in Australia chicken and chips stores are actually a thing! They sell rotisserie chicken and chips with chicken salt, very yummy 😋
I think they actually said they don't usually have chicken with FISH. After they had tried eating the chips with chicken salt and agreed how much better it made the fish taste.
Alton Brown once stated. "If I'm craving Buffalo Wings, I'm going anywhere but Buffalo, New York." "Why?, because it then becomes a gimmick, and quality starts to decline, the standard isn't what it should be because it has now just become a gimmick." Same applies to fish and chips I presume.

Barramundi is the best fish to have 🥰 And as a kiwi I have vinegar on chips. And almost everything else. And the trick to non greasy fried food is ultra hot oil. But not so hot it burns the food.
Also make sure it is fully entirely drained, without drying it out too much. Nothing worse than a fish shop worker who will take the basket out of the deep fryer, let it sit for barely 20 seconds or so, and then they serve it up, seeing the paper get all greasy almost instantly.

In Cape Town South Africa, fish n chips is sold in small family shops traditionally owned by Portuguese people. The product is excellent with a variety of seasonings. There is salt and vinegar of course, but due to Malay and Indian influences, there is also spicy seasoning. Pickled onions are displayed in big jars on the counter tops.
I'm an Australian and I've tried fish and chips all over the UK during three diffrent holidays. I've had some excellent home made style chips in the UK and some perfectly cooked fish.

You go to the wrong chippies.
Aussie fish and chip shops also change their oil a lot so its fresher. Well the good places do.
Cooked at a high temp, chips in lard is fantastic
@@Mazzamataz1 The best. Also fish and chip shops owned by Greeks are the best, as they still make their own chips as opposed to buying bags of frozen chips. I hate chicken salt too!

Chicken salt is essentially the seasoning for rotisserie chicken with some crushed chicken bullion cubes in it. His requirement to do the surgery was I had to do two weeks of rehab with his physio.
