- Today I am going to make the creamy avocado dip I use on everything. This is great as a dip with chips, tacos, and flautas. I sometimes use this as a dressing for salads or mixed with tuna fish. This is gonna be good!

INGREDIENTS
2 small avocados
1/3 cup of pickled carrots / chopped jalapeños
1/4 cup of pickling liquid from carrots
1/2 cup Mexican table cream
1 Tbsp fresh lime juice
3/4 cup to a cup of water
a handful of fresh cilantro
salt to taste

Those avocados are beautiful! I was taught a guac recipe years ago by a lady who has this food as part of her heritage, like you. 😊 for over 30 years I’ve made it the way she showed me. Now I have another recipe to try. Thank you so much!
Looks amazing. You would get more juice out of the lime if you flip the lime over...and it would squeeze easier.
Yes, glad someone else commented about the lime. I know it seems weird, but if you put the lime with the open cut down, it juices better.
I always say that if I had a cooking channel I would purposely do some things weird just to see how many comments I could get from it. I don't think she was doing that but if she was I would have to high-5 her!
What a simple recipe. Many years ago I ate at a restaurant at the end of Olivera Street in Los Angeles that was famous for its taquitos and avocado sauce. Sooo good. This looks very similar. Going to get some avocados soon and duplicate this. Thanks for sharing.

I will definitely be trying this one. I love the holding the corn tortilla tip. I always held mine together with a toothpick. 😄 I like the idea of softening the tortilla with oil in the microwave. I usually pre-moisten with water and microwave, but they fall apart. Thank you for the good tips and recipes.

I’ve made this before. It’s delicious! Instead of using pickled carrots/juice, I use fresh salsa since we always have salsa in our fridge. I’ve also used cream cheese along with the crema. Yum!

I'm OBSESSED with this recipe! I forgot pickled jalapenos, but I roasted serranos I had on hand as well as some onion and added those in with a splash of vinegar. BOMB!
Yummy. We love Flautas!!! ( don't know if I've spelled it correctly or not ). Our next door neighbor taught me how to make these not long after they moved here. They are from San Luis, Potosi. She uses toothpicks to keep them together and so do I. They are easy to make and are delicious! Thank you for the recipe for the sauce. Definitely a must make!!!

Yummo! Quick tip for you - you'll get a lot more juice if you put your lemons and limes in the citrus squeezer with the cut side down towards the holes.

Culantro is a good alternative to cilantro. My partner can handle cilantro, but is A-OK with culantro. Or you can use a large leaf of lettuce, like romaine or buttercrunch.

This looks exactly what I have been trying to replicate for many years. As a former Arizonan, Sonoran style Mexican cuisine is king. This may be a gringo item, but restaurants served the most wonderful, grande melted cheese crisps on crisp tortillas, covered with a creamy avocado mixture like this!!!!! I can't wait to try this out. Thank you. This is so simple, all my efforts over the years, I am embarrassed I couldn't come up with it myself. Not seen any cookbooks that even make this.

That's kind of how my mom always makes the guacamole for our flautas. She adds broth, fresh serranos and salt. Simple but absolutely creamy and delicious!

Looks great. Thanks for the tip on flour and water to hold the tortilla together. Last time, I ran out of corn starch I used that glue with the cow on the label. Half the guests said they were the best taquitos ever but the other half threw up... within minutes! I heard they trying to blackball me from future Christmas parties.

I know this is a dip, but it reminded me so much of my mom's taquitos with guacamole.
Her secret to her super flavorful blend was mayonnaise. Plus she added boiled green tomatoes and serranos instead of carrots/jalapenos. Cilantro and lime juice a must. Plus onions. ALL blended to a velvet texture.
Her taquitos were made with pot roasted tri-tip that she later shredded.
My all time Mexican plate. I could eat them for dinner, tomorrows lunch and dinner again!

Taquitos are my absolute favorite comfort food. Definitely going to try the flour paste. Tired of using toothpicks.

My family does a sauce similar to yours& we eat it just like that with chicken flautas. But our sauce has avocados, onion, tomatoes, lime juice, canned jalapeños& juice, cilantro.. so basically like a blended guacamole..

I can't wait to try this!! My husband is from Chile and there's a big misconception that the food there is spicy. Their avocado dip is not as good as this! IMO!

I am so excited for this recipe. I am always shocked when people don't like cilantro. I absolutely love it. Just found out about the soap thing.
Crystal Phillips. There's actually a genetic reason for it. One of the fun genetic reports on 23 and me (genealogy DNA program) let's you know if you are likely to find it soapy tasting. That would be awful.
@@lindaray8352 I didn't know that and heard mama say that and didn't get it. Wow I'm so glad I'm not one of those people. That is sad. I love strawberries but I'm allergic to them. But tastes like soap is horrible.
