I was a bit wary of eggnog because egg in a drink didn't sound appealing to me, but the second you said 'custard' it clicked and I was sold. I tend to add a bit of instant vanilla custard powder to hot chocolate milk to thicken it up a bit and make it creamier, so I'm very interested in trying this too. I'll definitely be making this recipe!
In Trinidad and Tobago 🇹🇹 we make a version of this call PONCHE DE CREME......absolutely delicious 😋 😍 However, our version is always spiked with alcohol; usually rum and it contains the nutmeg as well. I think there are other spices; not sure cause I only wait for the finished product!! 😂 My Mom is a boss at making it ❤ You made me laugh when picked up the bottle of alcohol! 😂👍🏼
I like this recipe, it doesn’t make a lot. Years ago, I picked up a Martha Stewart magazine at our local grocery store, it had a recipe for egg nog, I love egg nog. So I decided to make it. Oh My Goodness, I had eggnog for an army. We drank some, mostly I drank it, and sadly ended up throwing much of it away. To this day, I feel guilty thinking of all the eggs plus milk and cream that were wasted. Gemma, I’ll have to try making your recipe for this Christmas.
Ooooh delicious! Thank you Gemma, I want to try this for my family for Christmas Eve. You can save the egg-whites for Meringue Cookies, so easy to make and also yummy! Have you ever made those? Or you could use the egg-whites (with powdered sugar) for sugar cookie icing. I think egg-whites can be saved in fridge for 3 days. On Sunday we are hosting a big dinner party, I'm making a South African dessert called "Fluweelpoeding" [Velvet Pudding] it is a baked custard, similarly to what you made but with some flour to thicken, oh and no nutmeg. Pour the heated and thickened custard into baking dish then add a layer of apricot jam, beat the egg-whites with some sugar to stiffened peaks and add over the spread of apricot jam and then bake till the egg-whites are lightly brown on top. I know you would love this and I'm sure it would make a fun video too! Have a wonderful Christmas with your family! ♥

i am english, but now live in nz. as a child in england, mum made eggnog for christmas which was delicious. i haven't had it for over 50 years now, but still remember how it tasted. mum always made it with a brandy, paired with her brandy butter for mince pies, delicious.

We whip the egg whites separately and fold them into the custard that already contains rum and occasionally a dollop of whiskey as well. This is a real treat and is usually eaten with a spoon.
Hi. Boiling is too hot for milk, causing the proteins to coagulate and form a skin. Boiling also leads to milk proteins sticking to the bottom of the pot and scorching. Hope this helps.

Not quite. Mexican Rompope has other spices that aren't usually added in this eggnog recipe. They are similar, but not quite the same. Also, this eggnog is often served with alcohol, though optional. Hope this helps.
Why can't you heat the blended eggs with the sugar and the milk right from the start? That would save a step and the need to tempering the eggs. Eggnogg is almost the same as the German Eierlikör and when making Eierlikör all ingredients are mixed together. Instead of rum, grain brandy named Korn is used in Eierlikör.
Tempering gently raises the temperature of the eggs so they don't boil and curdle. It has to blend well, otherwise it's possible for the eggs to clump and taste like scrambled egg. Hope this helps.
