A lot of his stuff is relatively simple, you're right, but he goes into detail and theory, so you understand *why* you are doing things. Not just blindly following instructions, and that means you can apply those lessons to other things you may cook. It's a really great channel.

Whilst the UK doesn't have the best dishes in general, or that many... this is an absolute killer and easy to customise... a lot of people just make it traditional but I add spices, beef stock, all kinds of stuff to enrichen the flavour of the beef mince and my god... it can be one of the most delicious things you ever eat. Also super easy to sneak a lot of veg and goodness in
This was so good I made it again for my kids and grandkids. But my son came up with an idea for shepherds pie stuffed baked potatoes, so I baked the potatoes and scooped out the skin filled with the meat mixture and topped with the mash and cheese and baked like that. We all loved it!

Ok, so I made this last night, and it was absolute heaven on a plate. If anyone hasn't made this yet you are missing out. I substituted dark beer for smaller amount of IPA and more stock. Truly phenomenal recipe.
Another great vid bro. As an Irishman I condone this recipe. (apart from the sweetcorn) Its a dish created out of necessity by subsistence farmers or tenant farmers growing what they could to get by, at its basic its just beef/lamb/venison with whatever root veg you could grow topped with mashed potatoes.

I think I was a big fan of the channel before this, but something about this episode made me love the channel. I used this recpie, and adapted it to be a vegitarian versions with lentels and mushrooms as my wife had a doctor asking her to eat less meat at the time. The pandemic was full on shortly after this and I took time to really get good at cooking, largely based on your videos. Now I'm starting to cook again after spending a couple of years going hard on a small business which is now in the place where I can take one day a week to work from home and enjoy cooking while I do so, and this is the recpie I am going to make for my wife tomorrow. There's such a relatable human element tied into the food made in your videos. It makes cooking approachable for people without experience and enjoyable regardless of skill level. I love that you don't even edit out some of the mistakes (the onion crying face was amazing haha) you just roll with it without skipping a beat. I hope some day you land a show akin to a modernized version of Mr Rogers or The Joy of Painting because it would be great entertainment. Thanks for the work!
Wholly wow I can't believe how good this is and I just made it. I did use dried spices instead of fresh Rosemary and thyme. I added a pinch of chipotle pepper spice and smoked paprika. Love your message, and love your recipes, and love the love you send out in each video

I'm British, looks spot on, although the sweetcorn is a bit weird, no one does that, also I prefer a nice heavy-bodied red wine, like a malbec or cabernet sauvignon to deglaze and add depth to the mince. Beef stock with beef (Cottage pie), Chicken stock with lamb (Shepards Pie).
I think the difference is cultural and preference.. Corn is big in the US,but it also depends on which State ur in..U have 50 States In a massive country,and each one may possibly have their own take on cooking certain staples.. But u were right about the wine,a more traditional approach,and probably employed in North Cali,wine country..
I made this yesterday, and after making the bolognese and the chili several times it was simple to execute. I've been buying cottage pies from an English restaurant in town for the last year and decided to make it myself. It's awesome! I didn't add the egg yolk to the potatoes as my son is allergic to eggs, and I'll probably use red wine instead of Guinness next time just to see how it tastes. Overall, this recipe is a home run!
in england we dont put sweetcorn, thats a good idea though, but i think it probably works best with the beef than with a shepherds pie, also i think using the stout to deglaze is also a good idea, usually we would use wine or beef stock. i grew up on home made shepherds pies and cottage pies and i think a lot of brits my age did too, its an all time classic. Also something to look into is fish pie, very similar dish with white fish, sometimes prawns, sometimes some smoked fish in a white sauce topped with a creamy mash and finished in the oven, my mum always made it with a mix of cod and smoked haddock. now i'm all grown up i have a new appreciation for the expertise that my mum knocked out classic dishes like this on week nights and always had it ready promptly for dinner. I recommend the wine, then you can wash it down with a glass of the same wine, that works really well.

Dude - I love you. Thanks. Your approach to a cooking channel is very close to what I've imagined doing. I never would have done it anyway, and if I did - you would still be better than me at it. So, cool. You're not focusing on the actual recipe so much as you are on the concepts of the dish. And the occasional reminders of when to go nuts and when not to, when to be precise and when not to. For this dish, the detail of the fact that the mashed potatoes are only a part of the overall thing, so keep them stiffer than you would and not so stand-alone perfect as you would, is key.
Making this right now! Except I made colcannon potatoes instead of just mashed. I had the colcannon potatoes on St. Patty's day, so I remembered how much I loved them and wanted to use it for shepherds pie. Omg....SO delish! Thanks for your awesome recipes and videos.
Had an English vegetarian boyfriend who was obsessed with Pub food. Made Cottage pie with minced MUSHROOMS, and shallots instead of meat. Dredge the mushrooms with flour, saute' in butter with the shallots, add the usual stuff. Really complex flavor.

I had this growing up - my mum also made the beef mincemeat version too. It was my favourite meal AND we always called it "shepherd's pie". So I'm not changing that now. Coming from the north of England it was pretty indigenous there - so I think you might be overstating the Irish roots. Of course I'm certain you get great shepherd's there too! Your version sounds great - will try on this New Year's Eve and report back. You add more condiments and add cheese and a yolk to the mash, which I'm very interested to try.
Love the show. I'm a home cook and watching verifies I think I know what I'm doing. Technique might be different, but it gets the job done. Go Giants!!
As an Irish person I can say shepherds/cottage pie is popular here, but it’s definitely not an Irish dish. Pretty sure its English. Guinness definitely wouldn’t be used (although does sound delish) and it’d be just the worcestershire sauce and maybe brown sauce/beef stock.
I used to get sweetcorn in mine during school dinners, it was probably just the school trying to get more veg into our diet but it wasn’t bad! I enjoyed it
That's how we make it in Québec, Canada. Look up "pâté chinois", which means "Chinese pie" in French. It's called like that because it was originally made as cheap food for the railway workers.

Looks great, in Canada Quebec actually it is made with veal pork and beef cream corn and regular canned corn mashed potatoes and no cheese,like you say eve one has it’s own recipe,with lots of butter in the potatoes, like your version will definitely try It is really comfort food Thanks👋🇨🇦❤️
Glad you covered this, took me forever to figure out how to get the meat “savory”. I determined Worcestershire sauce and/or dry mustard was key. My niece and nephews love this! Def will be incorporating most of your technique. 💜
I think a way you can improve it (though it will take some more time) is to let the pie filling cool down before spreading the mash over it. You can put the filling in the baking dish, fill your sink up with a couple inches of water and rest the dish on there maybe with some ice cubes in the water to rapdily disperse the heat. Once cooled and firmed you can spread the mash over the beef without the mash pushing into the mixture to sort of sharpen the separation between the two during cooking so you avoid the mash blending into the beef so the beef becomes grainy and the mash soggy. This is even the sort of thing you can prepare the day before, leave in the fridge and shove into the oven the next day for a quick meal with no effort.
I made this last night and it was amazing. I will still make my own recipe when I'm feeling lazy, because its good and its easy, but this will be my first choice.
Something for people to try if they want to make a fancier version, is adding a bit of redcurrant jelly/jam, and then sprinkling a bit of herb breadcrumbs on top of the potatoes for a difference in texture. Tesco do this in the ones they make, and it's seriously good.
Made this last night and it was delicious. Definitely, not my mother's Shepherd's pie! I used red wine instead of stout so it was more like a bolognese, but it still worked.

Great job. As a Scots-born Aussie of Scots-Irish descent, I don’t care that you call it Shepherd’s Pie. My dad used to say that shepherds tended their sheep, they didn’t eat them, so it’s fine to use beef mince ;). The corn is of course an abomination, but, guess what, we don’t have to put it in our own pie, so let’s not complain...! Only one criticism: they are not ‘dimples’ you are cleaning with the peeler, they are ‘eyes’... ;)
I know the corn is frowned upon! But if you enjoy my show at all and respect my opinion, you’d try it for me. In America, a secret Summer treat is fresh corn on the cob that you cut the corn off the cob and mix it into mashed potatoes and it is one of the best things ever. That’s why I had them. They add a sweeter pop to it than just the peas. I think it goes perfectly with the dish. I’d love do hear your thoughts

Shepherds pie is really a British dish not Irish, though it's made throughout the British Isles. Calling it cottage pie if it's beef is a bit of a myth. People used to use meat left over from the Sunday roast, so either lamb or beef is fine. Sweetcorn definitely is not traditional, but really you can add whatever veg you like.

No not this recipie the scots used pastry on the top..sheperds pie is Irish and cottage is English. you don`t really have cottages in scotland, well you don`t call them cottages, but and bens i believe.
I make Shephers pie all the time and its delish. I know corn is not traditional but sometimes I do use it...I say do what you like! I use Guinness in stew sometimes so I'm think I will give this a try. It looks amazing and always really enjoy the music and your personal style.

I'm British, looks spot on, although the sweetcorn is a bit weird, no one does that, also I prefer a nice heavy-bodied red wine, like a malbec or cabernet sauvignon to deglaze and add depth to the mince. Beef stock with beef (Cottage pie), Chicken stock with lamb (Shepards Pie).
I think the difference is cultural and preference..
Corn is big in the US,but it also depends on which State ur in..U have 50 States In a massive country,and each one may possibly have their own take on cooking certain staples..
But u were right about the wine,a more traditional approach,and probably employed in North Cali,wine country..
I made this yesterday, and after making the bolognese and the chili several times it was simple to execute. I've been buying cottage pies from an English restaurant in town for the last year and decided to make it myself. It's awesome! I didn't add the egg yolk to the potatoes as my son is allergic to eggs, and I'll probably use red wine instead of Guinness next time just to see how it tastes. Overall, this recipe is a home run!
in england we dont put sweetcorn, thats a good idea though, but i think it probably works best with the beef than with a shepherds pie, also i think using the stout to deglaze is also a good idea, usually we would use wine or beef stock. i grew up on home made shepherds pies and cottage pies and i think a lot of brits my age did too, its an all time classic. Also something to look into is fish pie, very similar dish with white fish, sometimes prawns, sometimes some smoked fish in a white sauce topped with a creamy mash and finished in the oven, my mum always made it with a mix of cod and smoked haddock.
now i'm all grown up i have a new appreciation for the expertise that my mum knocked out classic dishes like this on week nights and always had it ready promptly for dinner.
I recommend the wine, then you can wash it down with a glass of the same wine, that works really well.

You're not focusing on the actual recipe so much as you are on the concepts of the dish. And the occasional reminders of when to go nuts and when not to, when to be precise and when not to.
For this dish, the detail of the fact that the mashed potatoes are only a part of the overall thing, so keep them stiffer than you would and not so stand-alone perfect as you would, is key.

Making this right now! Except I made colcannon potatoes instead of just mashed. I had the colcannon potatoes on St. Patty's day, so I remembered how much I loved them and wanted to use it for shepherds pie. Omg....SO delish! Thanks for your awesome recipes and videos.

Had an English vegetarian boyfriend who was obsessed with Pub food. Made Cottage pie with minced MUSHROOMS, and shallots instead of meat. Dredge the mushrooms with flour, saute' in butter with the shallots, add the usual stuff. Really complex flavor.

I had this growing up - my mum also made the beef mincemeat version too. It was my favourite meal AND we always called it "shepherd's pie". So I'm not changing that now. Coming from the north of England it was pretty indigenous there - so I think you might be overstating the Irish roots. Of course I'm certain you get great shepherd's there too! Your version sounds great - will try on this New Year's Eve and report back. You add more condiments and add cheese and a yolk to the mash, which I'm very interested to try.
Love the show. I'm a home cook and watching verifies I think I know what I'm doing. Technique might be different, but it gets the job done.

As an Irish person I can say shepherds/cottage pie is popular here, but it’s definitely not an Irish dish. Pretty sure its English. Guinness definitely wouldn’t be used (although does sound delish) and it’d be just the worcestershire sauce and maybe brown sauce/beef stock.

That's how we make it in Québec, Canada. Look up "pâté chinois", which means "Chinese pie" in French. It's called like that because it was originally made as cheap food for the railway workers.

The difficult part is always the "putting the mash on top of an almost-liquid layer" - I think you mastered it Steve!
Just put it in a piping bag (or a ziplock with a corner cut off) and pipe it on!
Let it sit for awhile and the liquid will thicken, makes it way easier.
You can put your mince into your baking dish and pop it in the fridge until sets. It's going to heat through in your bake. Cheers!

Looks great, in Canada Quebec actually it is made with veal pork and beef cream corn and regular canned corn mashed potatoes and no cheese,like you say eve one has it’s own recipe,with lots of butter in the potatoes, like your version will definitely try

I think a way you can improve it (though it will take some more time) is to let the pie filling cool down before spreading the mash over it. You can put the filling in the baking dish, fill your sink up with a couple inches of water and rest the dish on there maybe with some ice cubes in the water to rapdily disperse the heat.
Once cooled and firmed you can spread the mash over the beef without the mash pushing into the mixture to sort of sharpen the separation between the two during cooking so you avoid the mash blending into the beef so the beef becomes grainy and the mash soggy.
This is even the sort of thing you can prepare the day before, leave in the fridge and shove into the oven the next day for a quick meal with no effort.

Something for people to try if they want to make a fancier version, is adding a bit of redcurrant jelly/jam, and then sprinkling a bit of herb breadcrumbs on top of the potatoes for a difference in texture.
Tesco do this in the ones they make, and it's seriously good.

Great job. As a Scots-born Aussie of Scots-Irish descent, I don’t care that you call it Shepherd’s Pie. My dad used to say that shepherds tended their sheep, they didn’t eat them, so it’s fine to use beef mince ;). The corn is of course an abomination, but, guess what, we don’t have to put it in our own pie, so let’s not complain...! Only one criticism: they are not ‘dimples’ you are cleaning with the peeler, they are ‘eyes’... ;)
I know the corn is frowned upon! But if you enjoy my show at all and respect my opinion, you’d try it for me. In America, a secret Summer treat is fresh corn on the cob that you cut the corn off the cob and mix it into mashed potatoes and it is one of the best things ever. That’s why I had them. They add a sweeter pop to it than just the peas. I think it goes perfectly with the dish. I’d love do hear your thoughts

Shepherds pie is really a British dish not Irish, though it's made throughout the British Isles. Calling it cottage pie if it's beef is a bit of a myth. People used to use meat left over from the Sunday roast, so either lamb or beef is fine. Sweetcorn definitely is not traditional, but really you can add whatever veg you like.

No not this recipie the scots used pastry on the top..sheperds pie is Irish and cottage is English. you don`t really have cottages in scotland, well you don`t call them cottages, but and bens i believe.
I make Shephers pie all the time and its delish. I know corn is not traditional but sometimes I do use it...I say do what you like! I use Guinness in stew sometimes so I'm think I will give this a try. It looks amazing and always really enjoy the music and your personal style.
