    I never seen any Khmer people put sugar in the salaw machu kreoung

      It's purely to balance out the saltiness and round out the taste It does not make the dish sweet at all. You can leave it out

      ​​@@jt7952 I agree, you can use palm sugar. I like to use palm sugar to balance out the tangy sourness of the tamarind seasoning. If you like the stew more sour, leave out the sugar. I like to make this Salaw Machew Grueng with beef tongue. Super delicious!

    Cambodian was an empire before THAI or Siam at the time, why is the chili that Cambodian have always used for centuries is called Thai chili, shouldn’t it be called south East Asian chilies just saying. The same goes with basil it’s not Thai basil it’s Southeast Asia basil. The only reason why it’s called what it’s called since who knows when because looks like Thailand has been representing Southeast Asian. One country should not represent all Southeast Asian technically all these ingredients should be called south east Asian etc...That’s cool people can call Thai whatever but I’m gonna call it Southeast Asian chillie and basil and etc... Thanks for the recipe!
