You had the right idea to dry out first.. but what I do is use paper towels to help dry than use my own spices than put in the ninja to dry more for 10 minutes or a beer min than add oil of your choice for about 2 beers worth or half hour than check frequently and stir than one more beer or 10 minutes depending on how dark you want and voila potato chips nice and crispy

Suggest you only produce a video after you have tested the recipe. Guessing is not good.
    Otherwise:
Soak your sliced potatoes in cold water and rinse them several times until the water is clear to get rid of most of the starch. Healthier and they will then take the oil better and not stick together. Dry them thoroughly - I used cloth dish towels.
Place the dried slices in a bowl. Layer them and spray each layer with canola spray so each chip gets a covering of oil. You need no other oils. Stir them in the bowl to distribute the canola spray to both sides of each chip. Lightly sprinkle with sea salt or seasoned salt as you stir the raw slices - keep it light.
Preheat the Foodi by running it on crisper mode for 5 minutes. Place the slices in the crisper basket and air crisp them for about twenty minutes. Stir them every five minutes to assure even cooking/crisping. Just after they turn golden brown, shut off the Foodi and let them cool down a bit.
(If you find them not crisp enough, air crisp a few more minutes, but be careful to avoid charring them.)
Place in a serving bowl and enjoy!

If you rinse the potatoes it gets rid of some of the starch and helps keep them from sticking together so badly.

It is the starch that make potatoes stick together. Washing and drying them after cutting will eliminate the problem.

Anybody knows that with potatoes if you want to dry them slightly, you have to roll them in a tea towel and pat dry.

This is the one invention that I would highly recommend and it replaces many others. I also use mine almost daily! It's wonderful for busy people who want to eat healthy, home cooked meals.
