I like your videos because you give valuable knowledge like on the principles of cooking.. For e.g. Add salt to the oil so the fish doesn't stick to the wok; when cooking fish always use low medium heat if not GONE CASE! ; a good way to know when that particular ingredient is cooked is when the aroma kenna your nose.. Also you share your knowledge on the ingredients as well. Good for people like me who like to cook but don't have the skill to choose ingredients.
Chef Sam. Have you come across a traditional Cantonese recipe that stews fish head with nam yu? My late grandma mentioned it after she became demented and the ingredients are incomplete. Would appreciate if you could share if you know. Thanks!
The videographer focuses too much on Sam , leaving out the preparing & cooking process. This discrepancy should be looked into -what other more successful youtube videos will let the videographer knows!!!

Hi Lynne, sorry, never heard of stew fish head with nam yu. It must be your grandma's own secret recipe. But let me think about how to cook it ...
