Cantonese from Hong Kong here. I treed pancit palabok in Manila a few years ago & I was blown away by its mild but deliciously savoury flavour. I couldn't figure out what the sauce was. Apparently it's mashed tofu coloured with annatto!!!! For me as a Chinese, it's the most bizarre Pinoy "fusion" noodle dish ever LOL. (I mean, we never put tofu & noodles together). Can't wait to try & cook it myself now. Salamat po.
Pancit Palabok varies from Region to Provinces here in Ph, Mama Lulu’s version ain’t the most common one. You probably tried the Seafood version with Shrimp as its base sauce & no tofu. 😂😂😂
The way mama lulu cooks each every meal is a straigth forward na lutong bahay walang arte na kahit nanonood ka lang you feel the warmth of just being in your house and your favorite food is cook by your lola or nanay napaka comforting❤❤❤❤

Palabok and Pancit used to be her favorite Filipino dishes. Sadly she passed away sooner than I thought because of stage 4 cancer. Continue becoming an inspiration and a source of happiness to many. Pancit bihon was a dish I grew eating (I ate loads when it entered the table lol) as I had a Filipino aunty I grew up with. I'm so happy to see Mama Lulu cook this dish and you can tell all the love and hugs that are felt when cooking this dish. Meron din pong Palabok sa Cavite, specifically Tanza. this one is usually eaten on banana leaf. It is sold per pack then yung itsura nya is pa-triangle na banana leaf and dyaryo. Wala tofu or pork, it is just pure sauce but yung toppings nya ay Pork and Garlic oil, Tinapa, Chicharon, Kropek and egg .
