He even replied to me and told me I would be welcome to visit him. I really wanted to, but living in England with a young family, I just never got the chance. It's so much easier to cook the perfect omelette on a griddle if you have one. Proper temp is everything when it comes to cooking eggs correctly. Low N slow is best. I like Jack as a chef because he takes the good with the bad and he owns it all the way to the plate.
Been watching this guy for years. He reminded me of my former neighbor, who was a chef for 40 + years. Even looks like him. I remember when we first moved and he lived next door, I always felt self conscious whenever we invited him and his wife over for dinner. And from the first day he told me not to worry about cooking for a chef, that he appreciated anyone cooking for him, and that quite frankly, home cooks prepare things that are far superior to what any profession chef can do. Ever since then I've had no qualms about trying to please a chef.
Phenomenal human being I hope his two daughters keep the restaurant open that's the only way you can keep this great man's legacy alive through the food process of course but what a wonderful man

i think he may have been referring to the fact that if you store other items in the pan, you might mess up the nonstick surface. in other words you should have one pan just for omelettes.
This. Also, what Chef mentioned about the super fluffy omelette, eg the souffleed omelette, try this next time: 1. Use 3 x eggs. 2. Separate whites from the yolk. 3. Whisk whites with a pinch or two of salt until it aerates nice and starts to form good peaks. 4. Whisk the yolks by themselves but do not add anymore salt. 5. Whisk half of the now aerated whites into the yolk. 6. Gently fold in the remaining whites. Now, cook the omelette according to Chef's directions. I've used the tbsp of water per 2-3 eggs method that you've mentioned, and in a hurry it works wonders! That being said, holy smokes if you try this you'll be shocked at how fluffy those omelettes come out. For scrambles this works well, too, but I find that it's too "faux" for scrambles (meaning they're simply too fluffy, with too much technique for a scramble). Enjoy!

enough omelette there for a few servings. ..side of toast or home fries. american diner style with a little lift from incorporating air. i find that with steel cookware, less twirls with the fork, with visible yolk streaks left allows the item to remain more independent from the pan, and requires less butter. only pepper or garlic powder in the egg mix, if the butter it's prepared in is already salted. that's a whole lotta white onion for three food service size eggs- translucent or not. it woulda folded better in an eight or nine inch. nice garnish on top!!

Opal, I knew a place that blended the eggs in a milk shake machine before cooking, came out fluffy. I've seen people cook an omelette in the microwave that comes out fluffy too! Good Memories, Jack

I have cast iron that is far superior to Teflon. The only drawback is you need time to heat that iron up. If you can keep them hot, you can bang out some breakfast stuff and anything else that would blow. Your. Mind.

Jack, I add bout 1 tbs water to the 3 eggs. The water really fluffs up the omlett due to the steam escaping thru the omlet.

There is much here to learn. Everything he does makes so much sense. Sometimes cooking onions separately never occurred to me.
Or just first to get them soft or caramelized . Then garlic , if used for about a minute so not to burn then whatever else
comes last to mix in.
