    RIP my good man. Over the years you felt like part of my family. Cooking with the blues was and still is the only show that gave us an idea of what really goes on in a restaurant kitchen. Love him for that.❤️

      i think he may have been referring to the fact that if you store other items in the pan, you might mess up the nonstick surface. in other words you should have one pan just for omelettes.

    I've been following you for years. Have learned sooo much from you Daddy Jack. I cook the same way you cook! If you get the chance, make a video of where you came from, how you got started and where all you have cooked. You give hints from time to time, but a look at your cooking past will explain where you are today. I'm just glad I found your new channel! Thanxz

    It looks great ingredient wise. The eggs look way overcooked though.....I don't like a hard brown crust on my eggs but that's me.

    There is much here to learn. Everything he does makes so much sense. Sometimes cooking onions separately never occurred to me.

      Or just first to get them soft or caramelized . Then garlic , if used for about a minute so not to burn then whatever else
      comes last to mix in.

    Jack... u never ever need a knife with an omelet.. that bacon should have been either cooked morning of and diced, or cooked in pan to retain the bacon grease as seasoning for the eggs which should never... ever brown... ...

    Notice the brown handle on the spatula. That indicates a "high heat" spatula. The heat on this particular dish is probably safe for a "normal" spatula, but you might just end up melting it.

    enough omelette there for a few servings. ..side of toast or home fries. american diner style with a little lift from incorporating air. i find that with steel cookware, less twirls with the fork, with visible yolk streaks left allows the item to remain more independent from the pan, and requires less butter. only pepper or garlic powder in the egg mix, if the butter it's prepared in is already salted. that's a whole lotta white onion for three food service size eggs- translucent or not. it woulda folded better in an eight or nine inch. nice garnish on top!!

    His recipes taste amazing, i made his chicken cordon bleu and it was phenomenal and super simple.. however, even though this omelette looks delicious and surely is, it is definitely not a traditional omelette.

    Its interesting to see the differences in cooks who were trained in multiple styles and educated in classic forms Vs just learning in a mom and pop. I.E salting eggs before they go into a pan, overcooking them so they brown (not wrong just a stylistic opinion), over crowding the pan to decrease surface area to aid in steaming. Everything this guy did to make an "omelette" I would never do, and if someone came in to do a stage with me and did this I would say they are a novice cook and are generally unskilled. But thats not the case, this guy is a lifelong linecook. Exactly the kinds of guys that bourdain talked about as a dying breed in his book KC. I am totally stealing the way he cuts onions for bulk prep though.

    This is a comment on a different video but can't find it. You don't stick a delicate omelette under a fierce heat. I worked for Michel Roux part of the interview he asked me to cook an omelette. This is not how to do it.
