Alright mate, ive also just got the 5 pro and I also picked up a second dji mic 2 for this exact reason. What ive noticed from my own findings (interested to see if you've found out the same) When you connect both mics you get a choice of either mono or stereo L/R. What I will be doing is putting it in to stereo, which records both mics on to their own tracks, then in FCPX I'll make each mic its own mono track. from there ill be able to adjust each mic separately, this is all in practice and I haven't done my own video on it yet. But right now thats how I'll be doing it. Be good to know what you done for your dual mic set up.

jay ... the mic 2 you're using for the engine note is that the one that's picking up all the pops and crackles?... coz I thought it sounds like it's bashing against something or is a bit loose and rattly where ever you've placed it 😎..... just a thought
Hey mate no its proper secure when the noise reduction is on it somehow pops loud noises when i turned it off it seemed better. Also doesn’t help that my exhaust pops on overrun. It was in the small side pocket on my tail bag and wedge in the corner. To much hassle to be honest unless i can split the two tracks out independently which not figured out yet. I can use the recorded tracks off both mics to seperate but it’s a nightmare to sync. 👍🏻👍🏻
I enjoy relaxing to your videos. With touring bikes, they reduce the exhaust sound for long distance riding comfort. As a viewer (and subscriber), I personally don't need to hear the bike (more than before) when you are riding. The occasional cold start, warm start, or rev is nice of course (with your bikes and others in your vids). It's good to try these things though. Whatever you decide, I'm enjoying the channel. Although, I subscribe to a fair few different types of channels, yours is the only one I request notifications for. Peace.

I didn't really hear any popping in the first setting, but the second one seemed to me to be clipping more. Either way, it wasn't bad by any stretch.
