  • In this video I show how to make two different styles of noodles and storing them. Dry noodles ( Home made) will keep and a tightly closed container for a month or more!

    The reason I love your videos is because you teach us to trust ourselves, not rely on measurements and to create our own version of recipes.
    There is not another TH-cam Cook or Chef that teach you these things and is why I have been watching your videos for so long (and I mean sewing, crafts and all even though I started watching your videos when I was 18 or 19, I'm a 27yr old fully grown man now).
    I even talk about you as if you're someone from my everyday life when I'm asked where I found a recipe or learned some little tip or trick from lol.
    Just had to say that because at the beginning of this video when you improvised and actually shared an alternative of the dash of water to make up for the lack of eggs it reminded me of the confidence I first felt and have learned right from when I originally started viewing your videos :)
    Please keep up the good work Bev/Mumma Volfie because I would be lost in the kitchen without ya!

    I just flour my noodles and put in a brown paper bag.
    They dry out fine.

    I know this is from 10 months ago, but I wanted to tell you what a blessing this recipe is. I always bought Amish noodles, but saved a ton of money by making my own. I love my extra wide dumpling type noodles. 💞

    We used to make homemade noodles, roll them out and then we would cut the noodles with a knife and then we would put the noodles on bed sheets on the clothesline to dry out. This is alot less work. 😂 I love your little noodle machine 😍 God bless you and your husband 🙏❣️ 🐕🐾🐾 you cook and can so much like me. I have been canning or 57 years.     Mrs. V I am one of those cooks who likes to try things I never made and to come up with my own receipts. But making homemade noodles was one thing I just could not get that is untill I started watching your videos and the way you explain things and show it step by step I have finally learned to make them not to mention all the other things you have taught me . There are not enough words to express my thanks for all you have taught me. Thank you Mrs V love you to pieces. Tell Howie I said I'm jelouse that he is the taste tester . Lol

    Yum homemade noodles. Oh they are the best! No denying our season is changing and hearty soups, etc are creeping back onto the menu.

    I’ve got a noodle cutter just like yours. I love mine as well. I do enjoy making my own noodles because they also help to thicken my broth at times too . God bless Mrs. V

    Great video, I don't have a noodle cutter, so I roll mine out and cut them with a pizza cutter on wax paper, works great, were theres a will there's a way, have a wonderful day, and your soup looked delicious..

    You have a lot of patience. I just buy mine already made up because I have neuropathy all over and my strength is affected in my hands. Making them like you do at least you know what is in the dough and it is fresh.

    Homemade noodles are the best. I have a machine like that. Haven't made them for awhile. Thank-you for reminding me how easy it is to make noodles. I will have to make some very soon. Have a great weekend.

    Love your video's Bev. have you ever thought of asking Voffie to attach the machine to a board so you can clap it to the table so you don't have to work so hard on your one arm and shoulder? We aren't spring chicken any more Bev. Hubby and I just got (almost done moving) we been there for 20 yrs. and never thought we would be moving again... but we did.     Love how you talk about how the dough should feel and your camera angle. So important when you've never done it before. I've never used a noodle maker/cutter, but I may just have to think about getting one. Thanks for sharing! Catherine

    While I have a hand-crank pasta maker, I invested in the Kitchenaid pasta roller/cutters, and have not problem with them. I now mix the dough with the dough hook, and then use the pasta roller attachment. I love being about to use both hands, and it consistently makes wonderful pasta. I do wish they would make a wide noodle attachment, though, as that is the only one I have to hand cut. I can't imagine why you wouldn't like using the Kitchenaid!

      Carol Avant I too love the Kitchen Aid . I have two stand mixers and put the roller on one and the cutter on another. In the beginning I did it all by hand, then i moved to the hand crank. Now the Kitchen Aid. I love it. I never use any water. Just add more egg if dry. My Mother and my Grandma both made lots of noodles. I am 84, so we go a long way back with noodles.

    I just made my first pot of chicken and noodles for the fall...so good! I miss those warming dishes in the summer but it’s just too hot!! I love this time of year cause I can heat up the kitchen with stews and soups and breads and not care a bit! TFS hun. God Bless ~Lisa

    Bev, I have the same noodle machine and it used to squeak like I was killing it too... Not anymore, when you brush it down and clean it, spray some veggie or olive oil in it, all over, then run a dry paper towels through it where you roll the dough. It cleans out the oil but leaves it non-squeaky.

    My husband got me the kitchen aid noodle cutter but I have go put the machine on a chair so it doesn't hurt my shoulder . Mix the noodles in my food processor.

    I've tried the crank and then I got a kitchaid and noodle roller attachments. Yes, they were pricey ... $100 for a set of three, but my goddess has it made it so much less work. So worth the money. I make noodles more often now because of the KitchenAid. It really is a... Kitchen.... Aid. 😂

      The KitchenAid attachment that I have isn't like my metal roller it's a fancy one and it doesn't work with crap it's a pain in the butt I should get the metal ones yes and use the dough hook to make the dough I feel so silly

    I love these video's!! My Daughter has Celiac's disease and I would love to make her some Gluten Free Noodles. She also is Vegan as that diet works best for her with all her allergies. Question: Would you have a recipe for Noodles that would be Gluten and Dairy free?? Thank you so much!! Maybe this is a challenge that can't be done??

      Try making a small batch with GF Flour and for ever egg you want..grind up one tablespoon of FLAX SEED..Add 1/4 cup boiling water , stir and allow to sit until room temp..this is used by vegans and a binder egg substitute..but I have never tried it!

    Thanks for sharing the process. I have one of those ancient pasta makers that kneads the dough then dispenses and cuts to attachment (spaghetti, linguine) but it doesn't have a lasagna cutter :( I was going to buy one like you have off eBay or Amazon. Buying gluten free noodles is getting to be too expensive.

      @@OurHalfAcreHomestead I have had my Kitchen aid for 20 some years and use it a lot. I am also a accessory addict some work well like the pasta attachment that rolls out the dough and cuts it. The dough press just does not work for me.

      @@ingridellis8237 The Pasta make I have for my kitchen add is a fancy press and noodle die kinda like what is on my Omega juicer..but I never use it..it's a pain..NOW..if I got a stainless roller cutter for the kitchenaide like I have for my hand crank..I would use it for sure!

    We used to buy cracked eggs for a .25. Never got sick. I wouldn't use them in making noodles. I no its not a good idea.
