Homemade bread is considered a comfort food in our house. Your basic white bread is a great recipe. Sometimes I get so caught up in making sourdough, raisin or all the other "fancy" breads, I forget how great the basic loaf really is. Thanks Bev.
Very good MrsV. Some things that can beginners can do once they have the basics down -- * Like crust? Do a lite egg wash just before popping it in the oven. * Mild flavor adds? Sprinkle sesame, caraway, or fennel seed on top before placing in the oven. Imparts a nutty flavor. * Want more chew? Add a tablespoon of vital wheat gluten during the mix. (not for the gluten intolerant) So many things you can do to make your own bread unique.
This is step by step how my grandma taught me to make bread except she would raise hers on a table in the dining room that was near a forced air heat vent.. necessity is the mother of invention you know :) I use my "cowboy" as well because of my arthritis but every once in a while I do it by hand just so I know I still can. Thanks again for all you do for everyone out here!
I just made this bread today. Yea! And Thank You! Today is our fourty fifth anniversary and I wanted to make something special. This was my first bread besides biscuits (I can make some great biscuits) . The table cloth tip was fantastic! That made the whole thing so much fun instead of work. My husband loved the bread and I know I will be making it often. Thanks again.

Good video. My mother made bread all of my growing up years. I didn't learn, just let her do it. When I was in my 20's, with 2 small children, my older sister and 3 children had to stay with us for awhile. We didn't even have enough money to buy a cheap loaf of bread. I called my mother desperately!! I asked for a bread recipe. She came over and showed me how to make it (I did have flour and yeast). This was 41 years ago and I make all kinds of bread now. Sure love my mixer though

I have been making a bread like thisfor the last 5 yrs. Good bread! Makes good pizza dough too. Dinner rolls you name it. This is a good starter for chibata bread also.

Another great demo Bev! Years ago the perfect place to rise my dough was the top of my old fridge, it stayed warm on top all the time, the newer ones not so much, like you I place it in the oven. Or in a sunny spot. Looks beautiful! Here's a no knead artisan bread;3 cups all purpose flour1 & 3/4 teaspn. salt1/2 teaspn. yeast1 & 1/2 cup warm water a 3 quart dutch oven (pot with lid, cast iron)In a large bowl mix flour,salt and yeast then add water and mix.cover bowl with plastic wrap let set on counter 12-18 hours (very sticky dough)Preheat oven 450F Place dutch oven with lid (3 quart size) in oven to heat for 30 mins. ungreasedWhile that is heating, on a very heavily floured surface dump dough and shape intoa ball, let rest covered for 30 mins. (while pot is heating.)Pick up dough and drop into ungreased pot (with heavily floured hands) coverwith lid return to oven for 30 mins. then remove lid and bake for 15 mins. more.Then remove from oven and with mittens carefully remove from pot, cool completely on a wire rack.Can also add other ingredients to dough to mix it up such as, shredded cheese and herbs, or nuts and fruit. Also can use it for pizza crust, just use lots of flour and roll out. A good chewy bread great for soups and stews.
Bev, I just tried this today, pulled out my old circa 1988 bread maker just used it to do the kneading, then shaped it like a french loaf came out great(those old bread makers shaped bread like a concrete block) I think you got me back into bread making..now..back to canning those 48 jars of pickled beets waiting for me... ;) -dave
couple of things for the cookbook...remind people that adding the salt to the water/sugar/yeast without first adding flour will kill the yeast, or at least slow it down. Also, in the kneading...it's more than just folding and pressing, incorporating more flour. The stretching of the dough when kneading is what develops the gluten, giving bread its lovely texture.
This was very helpful. For some reason my bread hasn't been working out lately. It simply won't rise. I've tested the yeast and it's not that. I don't know if it's the humidity or what. Maybe I'll try it again after your directions. I'll let you know how it turns out. My husband loves home made bread. Thanks for all the great tips! You make it look easy : )

Brought back memories. My mother always made bread, I didn't, just let her make it & I ate it.. When I was in my 20's with 2 young children at home, we were out of money & didn't even have enough to buy bread. I called my mother & asked for her recipe. In just a few minutes my father called & said that he was sending my mother over to help me make it. I had the yeast & flour already. It came out successfully & from then on I could make bread. My husband now just loves my homemade bread. I didn't bake it this summer so now it is time to start baking again. I also use a mixer now. Vida

I'm fairly new to making bread and wanted to say thank you for the tip to using a tea towel. That is so smart! I love the results but hated the flour clean up afterward. I've been using a tea towel now since watching your vlogs and it's so much easier to clean up. Which means I'm more likely to make more bread rather than buy it. That's the goal. Keeping it simple, but keeping it do-able. Again, thanks.
Just into learning the historic and well proven techniques of cooking of my forbears, so to speak. I am enjoying it very much and have a new found respect for my Grandparents! My question is, I am literally going to make my very 1st loaf of yeast bread (will use this lovely video as my guide) and was wondering if I can substitute my homemade pure beef suet or unsalted butter for the avocado oil? Or will it not turn out right?
This is one thing i've never done. i've always been intimidated by bread making and omg there's nothing like homemade bread and buttah! it's still on my to try list and homemade egg noodles!

About how long did it take for your bread to rise the first time, in the bowl? And then the second in the loaf pan?
Great question...I always scroll through the comments for something I may have missed. I am a beginner to this method. Years ago I got a bread baking machine...absolutely loved it. It finally quit working, so here I am trying to figure it out🙄. The only other thing I was unsure about was in the beginning after mixing the warm water, sugar and yeast, was for how long to wait to see if the yeast was active. I found out after waiting for about 12 mins. (LoL!!) and my bread was simply delicious...the very first try!

This is the recipe we use for our bread, simple and easy. It's nice to have homemade bread, the store bread has more sugar then chips and pop go figure. Cheers!!

Haha when I was young I used to have to do a lot of cooking because my mom worked shiftwork. One day I decided to make buns, they ended up as hockey pucks, literally. Every winter my dad flooded the back yard and made an ice rink. Those buns were so hard that my brothers used them as pucks.
+dana lee My mother told me a story about when she learned how to bake bread in 1945, in a wood range oven. The bread was so hard that she gave it to the dog and even he wouldn't eat it. LOL. By the time I was born, my parents already had 4 kids and she baked a lot back then. I even remember as a kid her baking all sorts of things in a wood range in the back summer kitchen of an old farm house we lived in. By the time I was born she baked and cooked like nobody's business. By the time the 1970's came around, she didn't bake as much. Just for special occasions and making biscuits.
+ShalimarPerfume Years ago I was trying to master a wood cookstove & had a loaf turn out so hard we couldn't cut it. I threw it in the chicken pen & the next morning it was still there - they couldn't peck a dent in it. Once in awhile my kids still tease me about making "chicken bread".
My hubby goes right crazy if I use his 2 non stick wilton bread pans for anything else but bread. And I am not supposed to coat them or even wash them and bread comes out of those pans all the time. Well except for when I have used our older pans that in the past have been greased and floured up for cakes and used for meatloaves,then washed. He got so upset at me years ago when all his bread was sticking, so I make sure that 2 of my loaf pans are not compromised and almost like new. Yeah for a while there I told him to just form loaves to put on a tin foil covered cookie sheet instead. My mother for many years used a 1 inch thick by 2.5 feet square solid one piece wooden bread board to kneed her dough on and it never seen water on it to wash it either. We have to make most of our own bread now a days. Whether it is me doing one or 2 loaves at a time with the KA mixer or my hubby that can do like 12 loaves worth at a time all by hand and formed into various shapes and sizes. He also likes to add cheese, caramelized onions, seeds, herbs or spices or cinnamon/sugar and raisins to some of the dough when hand kneading and forming the dough before the second rise. For some reason I cannot tolerate a lot of the store bought bread. Bakery bread and our own I have no problem with. Some of those ingredients the commercial producers put in bread I must have a sensitivity to them. Special case though. For 16 years hubby always brought bakery bread home from where he was working. Then he went back to college then now working as an industrial chemist, he does not bake very often and I resorted to buying commercial store bought bread. Something you said to me years ago Bev about ingredients made me realize this so I learned how to bake bread on my own instead of being baker's helper/dishwasher to the hubs when ever he takes a inclination to bake.
+OurHalfAcreHomestead Oh I won a giveaway for guessing how many kittens and date of births of a pregnant mama cat about a week ago. So I picked my birthday as the date and 5 kittens and I won. I received a box of Tattler lids and rings today from TH-cam channel datoken and thanked her very much for them. Excited to try them out. Oh and I received a call from the Freshco manager today over some half rotten flowers my hubby gave me for my birthday. I complained to the head office Sobeys about that and the manager of Freshco wants me to come in to pick out 2 bouquets of flowers and $16 cash back for the ones that were rotten. Yeah I was pretty mad at Freshco and I told them so.
Thanks so much for this recipe/ demo. When I have attempted homemade bread I ended up having to throw it out as it was like a brick. I have a question for you, how do you know if your yeast is still good? I have some in packets in the cupboard and would hate to use them if it wasn't good.
☝🏻I do keep my yeast in the freezer(stored in 1/2 pint canning jars...the smaller quantity keeps me from taking it out possibly affecting the yeast) and allow it to come to room temperature before blooming...I only use "rapid rise" yeast and purchase a 2lb block at a time at the Amish/Mennonite store, however, I keep a small quantity of individual packets of "instant rise" in the freezer in case of emergency or a recipe that calls for it.😉👍🏻 Not sure if you have had an answer but, test your yeast by mixing 1 packet of "rapid rise" yeast as directed on the packaging or 2 cups warm water(110°F) that has 1 TBSP of sugar/honey stirred until it dissolved then add your packet(or 1 TBSP) yeast...WAIT ~10 minutes and watch it bloom before adding other ingredients( ☝🏻I use a 2 cup glass measuring cup and my yeast is very fresh so I watch it to make sure it doesn't bubble over😉) "Instant rise" yeast doesn't require it to bloom so I would test it the way you would "rapid rise" yeast or check the expiration date on the package as a guide😊

dana lee, don't feel bad. My brother-in-law would often tell people he could take my first batch and use it for ballast for his lobster pots. l could turn out a lemon merange pie, but bread... My sister-in-law had to come over and teach me. Talk about punishment, my oven gave out halfway through baking. The bread fell over the side and finished baking. We had to cut half the loaf off to get it out of the pan. Believe it or not it tasted good.
my hands hurt just watching you. I can no longer cook the way that you do but I do have quite a bit of kitchen Machinery to help me out and a caregiver to cut vegetables. ;-)
So do you use all purpose flour or self rising? I have tried to make bread a number of times and I think I figured out what I was doing wrong (water to hot). I love fresh bread and I'm sure the girls will too. Sorry Bev but I cracked up when you said (Ouch that's fricken hot). Love you guys

I'm fairly new to making bread and wanted to say thank you for the tip to using a tea towel. That is so smart! I love the results but hated the flour clean up afterward. I've been using a tea towel now since watching your vlogs and it's so much easier to clean up. Which means I'm more likely to make more bread rather than buy it. That's the goal. Keeping it simple, but keeping it do-able. Again, thanks.

Just into learning the historic and well proven techniques of cooking of my forbears, so to speak. I am enjoying it very much and have a new found respect for my Grandparents! My question is, I am literally going to make my very 1st loaf of yeast bread (will use this lovely video as my guide) and was wondering if I can substitute my homemade pure beef suet or unsalted butter for the avocado oil? Or will it not turn out right?

Thank you so much for sharing this. The only recipe I had was crazy long. Took a total of six hours to let the bread rise, after kneading. But with this, I will be making ALL the time! Thank you! About how long did it take for your bread to rise the first time, in the bowl? And then the second in the loaf pan?

Great question...I always scroll through the comments for something I may have missed. I am a beginner to this method. Years ago I got a bread baking machine...absolutely loved it. It finally quit working, so here I am trying to figure it out🙄. The only other thing I was unsure about was in the beginning after mixing the warm water, sugar and yeast, was for how long to wait to see if the yeast was active. I found out after waiting for about 12 mins. (LoL!!) and my bread was simply delicious...the very first try!

I shake the left over flour into the grass to feed the worms and nightcrawlers. it takes a nightcrawler years to mature.

Haha when I was young I used to have to do a lot of cooking because my mom worked shiftwork. One day I decided to make buns, they ended up as hockey pucks, literally. Every winter my dad flooded the back yard and made an ice rink. Those buns were so hard that my brothers used them as pucks.

+dana lee My mother told me a story about when she learned how to bake bread in 1945, in a wood range oven. The bread was so hard that she gave it to the dog and even he wouldn't eat it. LOL. By the time I was born, my parents already had 4 kids and she baked a lot back then. I even remember as a kid her baking all sorts of things in a wood range in the back summer kitchen of an old farm house we lived in. By the time I was born she baked and cooked like nobody's business. By the time the 1970's came around, she didn't bake as much. Just for special occasions and making biscuits.
+ShalimarPerfume Years ago I was trying to master a wood cookstove & had a loaf turn out so hard we couldn't cut it. I threw it in the chicken pen & the next morning it was still there - they couldn't peck a dent in it. Once in awhile my kids still tease me about making "chicken bread".

My hubby goes right crazy if I use his 2 non stick wilton bread pans for anything else but bread. And I am not supposed to coat them or even wash them and bread comes out of those pans all the time. Well except for when I have used our older pans that in the past have been greased and floured up for cakes and used for meatloaves,then washed. He got so upset at me years ago when all his bread was sticking, so I make sure that 2 of my loaf pans are not compromised and almost like new. Yeah for a while there I told him to just form loaves to put on a tin foil covered cookie sheet instead. My mother for many years used a 1 inch thick by 2.5 feet square solid one piece wooden bread board to kneed her dough on and it never seen water on it to wash it either. We have to make most of our own bread now a days. Whether it is me doing one or 2 loaves at a time with the KA mixer or my hubby that can do like 12 loaves worth at a time all by hand and formed into various shapes and sizes. He also likes to add cheese, caramelized onions, seeds, herbs or spices or cinnamon/sugar and raisins to some of the dough when hand kneading and forming the dough before the second rise. For some reason I cannot tolerate a lot of the store bought bread. Bakery bread and our own I have no problem with. Some of those ingredients the commercial producers put in bread I must have a sensitivity to them. Special case though. For 16 years hubby always brought bakery bread home from where he was working. Then he went back to college then now working as an industrial chemist, he does not bake very often and I resorted to buying commercial store bought bread. Something you said to me years ago Bev about ingredients made me realize this so I learned how to bake bread on my own instead of being baker's helper/dishwasher to the hubs when ever he takes a inclination to bake.
+OurHalfAcreHomestead Oh I won a giveaway for guessing how many kittens and date of births of a pregnant mama cat about a week ago. So I picked my birthday as the date and 5 kittens and I won. I received a box of Tattler lids and rings today from TH-cam channel datoken and thanked her very much for them. Excited to try them out. Oh and I received a call from the Freshco manager today over some half rotten flowers my hubby gave me for my birthday. I complained to the head office Sobeys about that and the manager of Freshco wants me to come in to pick out 2 bouquets of flowers and $16 cash back for the ones that were rotten. Yeah I was pretty mad at Freshco and I told them so.

Thanks so much for this recipe/ demo. When I have attempted homemade bread I ended up having to throw it out as it was like a brick. I have a question for you, how do you know if your yeast is still good? I have some in packets in the cupboard and would hate to use them if it wasn't good.

☝🏻I do keep my yeast in the freezer(stored in 1/2 pint canning jars...the smaller quantity keeps me from taking it out possibly affecting the yeast) and allow it to come to room temperature before blooming...I only use "rapid rise" yeast and purchase a 2lb block at a time at the Amish/Mennonite store, however, I keep a small quantity of individual packets of "instant rise" in the freezer in case of emergency or a recipe that calls for it.😉👍🏻
Not sure if you have had an answer but, test your yeast by mixing 1 packet of "rapid rise" yeast as directed on the packaging or 2 cups warm water(110°F) that has 1 TBSP of sugar/honey stirred until it dissolved then add your packet(or 1 TBSP) yeast...WAIT ~10 minutes and watch it bloom before adding other ingredients( ☝🏻I use a 2 cup glass measuring cup and my yeast is very fresh so I watch it to make sure it doesn't bubble over😉)
"Instant rise" yeast doesn't require it to bloom so I would test it the way you would "rapid rise" yeast or check the expiration date on the package as a guide😊

use a sharp serrated knife. that's the only way to get non smooshed bread slices. :)

+Lori cook in all honesty I never look at the label..I just grab the one pound vacuum sealed pack and go. I have not bought some in a long time.

dana lee, don't feel bad. My brother-in-law would often tell people he could take my first batch and use it for ballast for his lobster pots. l could turn out a lemon merange pie, but bread... My sister-in-law had to come over and teach me. Talk about punishment, my oven gave out halfway through baking. The bread fell over the side and finished baking. We had to cut half the loaf off to get it out of the pan. Believe it or not it tasted good.
