i think it was a combination of: not enough water, she strained it but then added back the gloopy stuff, and added a ton of sugar & malic acid. in fact, if you just mix strawberries with sugar, and let it sit for a couple hours: it will dissolve and form a syrup of sorts. kinda like the stuff she ended up with. the vegetarian gelatin wasn't the problem. in fact, iirc: Agar Agar (a vegetarian gelatin) is actually stronger than animal gelatin.

A tip from two chef friends - you should never use a metal spoon on a pan while mixing (you can use one for taste testing at the end) Using a metal pan and spoon you are affecting the taste and texture of what you making because the two metals react but also the safety issue of micro pieces of metal breaking off due to being scraped together entering your food.

That was also boiling, not simmering. That was probably a good hint you made a mistake with the water, because simmering that mixture would've been hard to notice given how thick it was. Generally if you want to make it simmer, you want the liquid to be hot enough that if you move it it'll create bubbles against the side of the pan, but otherwise look mostly still.
The "hand whisk thingy" is an immersion blender and they're FANTASTIC. I legitimately don't know why anyone uses normal blenders when these exist. I do recommend using them in a higher-walled vessel (like a small pitcher) to avoid splatter, though.
Immersion blenders hit their limit at some point if the chunks are too hard or too big. I once tried blending frozen bananas, it took forever and the immersion blender became really hot. But yes immersion blenders are great usually, much more easy to clean and you can blend stuff like soup in whatever vessel.

You can make ricotta or paneer, baked goods, cocktails or homemade sodas, jams or syrups, you can even use it to make a cheat sourdough bread! Or just, yk, make things tangier.
As a home cook, there are a few things you could try in order to save your recipe here, one is trying to have your gelatin dissolved into a little bit of water before mixing into the fruity mixture. That might help with your consistency. Second, I think you can buy little bear shaped or special shaped molds to help with the forming process. Third, when you add your sour coating try keeping them inside the molds and rushing them back into the freezer to freeze the sugar coatings to the candy, also should help with any settling that still needs to happen after the initial cooling process. And fourth, if you want them to not melt at room temperature, you might try looking into using some sort of thickener or something food safe that chemically stays solid at room temperature. Tampioca or something like that might work, you'll need to read up and look around because that one is beyond me and my current skillsets in cooking. Anyway, love the vod. I think it was a wonderful first attempt. You could have always said they were Halloween candies. 😉 If you don't mind some possible suggestions; you could try to get a sieve that has a screen that is not so fine. Maybe a metal screen. Try pouring it through the sieve when it is still pretty hot. Gelatin can also be heated back up to get soft again. At the point where it got lumpy, it looked a little cool. You could have also added a bit more water at that stage, but I'm not sure it needed it. The fact that the water came out at the end might have had something to do with not being properly strained. Gelatin is very water soluble and will come out with the liquid part. The fact that there was much more seedy, pulpy material too might have thrown off the ratio of genitin in the whole mix. One of the fun things for me in cooking is trying to figure out when things don't go quite right. If you have that attitude, it is fun to try it until it goes right. I bet you can get it to be more like you expected it to be if you try again. You both said it tasted good, so there is probably only a couple weeks to get it the way you want it to be. It was incredibly sweet to try to do this for F1nn, and he was very happy and grateful that you did.
Pro tip for the future: Convert the amount of water in the recipe to grams and weigh the water, this will give you a much more accurate recreation of the recipe! PS: Love your videos Icky!!!

you got it wrong at the gelatine. gelling agents have different strenghs, so you can not just substitute them 1 for 1. The veggie had a higher bloom than the one they wanted to use. (i guess they wanted gelatine with a bloom of 180) If it was agar agar, it has a bloom of 700, so you need to divide it to get right amount. Your vege gel is made to solidify 200ml of water per pack. I recommend not to use these pre mixed packs. You should by pure agar agar, then you have the correct bloom and can calculate from there. 20:06 the sugar melted because you need a stabilising agent and a spitting agent. So something like calciumcarbonate and palmfat. Mix it in a high power blender with the acid and sugar(best would be dextrose here) Dehydrate it and than you can use it. It will stay put and not disolve. (or you could buy it XD)
