I just wrote a long reply to a different person asking the same question, but the short answer is that it's really risky for not much reward. The person parrying can vary the length of the parry, and the timing window to throw it is very tight. If the grabber is wrong in that timing at all, they usually die. And if they're right, it does significantly reduced damage compared to the hit. So it's not worth it a lot of the time, especially if these guys are so good that they can reliably know where the ball is going to go after the hit. It's safer to just position for that.
From experience I can safely say that you're fingers can't keep up with your brain. The electrical signal isn't fast enough when being sent through your nerve tubes to your finger receiver.

Parries can be lengthened or shortened depending on how long the person hitting the ball holds the bunt button. The timing to grab a parry is a lot shorter than you'd think. The blue circle needs to be out surrounding the ball still, and if the person lets go of bunt, it disappears in just a few frames. So you are having to bet on whether the person hitting the ball is going to fully extend it or just for tap it. And if you're wrong at all, you die. And to top if off, grabbing a parry does significantly reduced damage compared to the hit, many times not killing at all. So often, it's higher risk and lower reward. As someone who goes for a lot of parry grabs, it causes you to lose a lot unless your reads are super on point. And since these guys are so good at knowing where a ball is going to bounce after the hit finishes, it's just safer to position for that.
Damn if you realize people arent aware of esports and youre trying to legitamize it, you should at least come at it with a little bit of professionalism.
