Hi Nick, thanks for the question! We definitely recommend fresh water daily, especially during the summer when it is hot outside. Our standard fresh water tank is 28 gallons.
Thanks for the question! Every water package should have a water heater that does this automatically. For example, a 6 gallon electric water heater will kick on periodically to continuously keep 6 gallons of water at the right temperature. There are propane powered heaters as well (which are typically more efficient), and they are popular because they can heat the water faster and they hardly use any of the trailer's electrical draw.
Your health department will require a "potable water source" delivered through a potable water hose. This can come from a commissary kitchen, your home, or any other water source that is approved by your health department.

How long should or can we keep water in the tank? New water every day? Also how big is the tank? (14 ft trailer for one more scoop ice cream)

Where does the potable water hose connect to? Can the potable water hose connect to a threaded spigot that is connected to municipal water?
