Oh my dear god...I just made this and it’s absolutely amazing. It’s cheesy, garlicky, spicy, creamy, salty, savory...everything I love. I added a bit more chili flakes bc I love spicy things and a sprinkle of mushroom seasoning but otherwise I followed the recipe exactly and I am obsessed. I can barely pull myself away from the pot. It was super quick and easy to cook too. Everyone reading this should absolutely try this! Gonna make your spicy nuggs now to go with it ❤️
My girlfriend and I made this tonight and it was just incredible. Best vegan mac'n'cheeze I ever had, period. It was soooo good. I twisted the recipe a bit cause it was tasting too much kimchi and not enough cheeze, so I added nutritional yeast and some Muschrooms Umami spices from Trader's Joe and it was next-level. Thanks for this amazing recipe!

I made this! It did turn out closer to the color of Flamin Hot Cheetos, due to my homemade kimchi. I wasn't sure if Sodium Citrate was the same as or could be substituted with Citric Acid, so I left it out. I had no limes! A squeeze of lemon worked great. I do a LOT of Korean style sauces and flavors so this was so much up my alley, IT'S F*ING DELICIOUS!!!!! (I also pressure-cook my pasta. I added about a 1/2 c. water to the whole pot because I LOVE it when the macaroni soaks in the sauce!
My one cooking obstacle is I hate boiling water for pasta so I happily made this using pre-bought vegan mac n cheese from Trader Joe’s, doctored it up with more cheese and a splash of milk, gochugaru, gochujang, chopped kimchi which I didn’t bother to blend and some extra seasonings. Wouldn’t have thought of it on my own but so simple and pretty dang good!
think the burger could be improved in structure by binding the mac n cheese and possibly frying it, like a cheese crisp or smth. think thatd be structurally stable and contribute to mouthfeel
Hi. :) I know you said sodium citrate helps with the consistency of the sauce, but what do you mean? Does it keep it creamy? I know vegan cheese sauces loses creaminess very quickly.
Ooh, blending it into mayo! That sounds great. I was thinking this might be good as nachos, then you mentioned it. Would you make any changes if you were to use the cheese sauce for nachos? How would you make it? I was thinking maybe this would be good for Father's Day BBQ. I make a good regular mac 'n' cheese, and was thinking of that too, but maybe something different would be nice for a change. What do you thing TBDude? Should I make nachos with your sauce, or make your gochujang and kim chee mac 'n' cheese? Decide for me!!
