    For quick ref:
    SHORT MIX DOUGH: 4-5min 1st speed + 1-2 min 2nd speed
    IMPROVE MIX DOUGH: 4-5min 1st speed + 4-5min 2nd speed
    INTENSIVE MIX DOUGH: 4-5min 1st speed + 6-8min 2nd speed

    I'm looking for a wheat flour or some way to make gluten very strong to make bread with large alveoli.
    what would you advise me?

      Gluten powder is what I use. You can buy it on Amazon

      Saimmon Ramalho . I put in 1 table spoon for 2 cups of flour.

    If I want to add Gluten powder then how to add it? And does it require less water?

      1.5 tsp per cup of flour. Additional water may be needed.

    You say all of this ... but my mom followed these instructions and suddenly there was a CO2 explosions from the gas formed in the dough.
    She lost her arm. I hope you are all satisfied.
