Yes you definitely can. Because fresh pineapple has an enzyme called proteolytic which breaks down the proteins. Jelly also has gelatin which is made of protein. and that is why the jelly becomes jelly like. But when you add the fresh pineapple which has proteolytic, it digest and break down the proteins in gelatin and that’s why the jelly won’t get hard and stays. However, if you use the canned pineapple, it was most likely boiled in a temperature which denatured the proteolytic (enzymes) protein. Meaning that it is no longer functional anymore cause it is denatured. so u can use canned pineapple to and be sure it gets solid. Or you can grab a fresh pineapple and boil it in 80 or 90 degrees temperatures and that also will will work. PS: I don’t know why I wrote this much about a pineapple and jelly hehe 😅.
