Great hack. It works. I propped my pizza stone up on the crescent-shaped charcoal holders that come with the grill to get it closer to the lid. Stacked coals in back. Left front 1-2 inches open on hinge. Creates a tremendous convective flow out of the front. Threw wood on coals right before putting pizza on. Temp goes well over 600 F, even 700 F.
I will be using this method tonight - probably do this a few times a month since I made this video. Works extremely well, even in the winter. Thanks Felix!
Just finished and ate my first kettle pizza. I did use a pizza stone with the perforated pan placed on top. The top measured 600+ degrees when pizza was added. Success! Now my practice pizza looked more like Homer Simpson but the ‘real one’ I got to look authentic. Simple margarita style. Ton of fun and your mod and tips were so helpful. 12 minutes and a great result. I will play around more as I get the hang of it including skipping the stone. I used a couple 90 degree piece of 4” steel angles for my riser and worked great. You have a great no bs channel. Thanks!

This is hands down the best method for pizza in a weber kettle. I've made New Haven style pizza last time I went camping. Friends and family were totally blown away.

This is the best kettle pizza video on the web...I made some mistakes and wish i followed the video closer...2 biggest mistakes I made were not getting the dough thin enough and not using lump on top of the briquettes to get the temp hot enough...I will try again and nail it! Great video!!!
Hey Nate, this 2 yr. Old recipe just popped up on my screen, figured i'd watch it. Very nice, i would think i would use my charcoal grill also to get some of that flavor in the crust. I don't think this would work nearly as well on my gas grill, or maybe not at all. Have a good day my friend.
Pizza on the grill is the best....they do make an attachment that works really well on the gas grill, even though I do not use it much at all. One thing I can really nail is pizza outside. Cheers Steve!
Kick ass pizza! Just made one and turned out fantastic. Had to use 1.5 chimneys of coals, skipped the hard lump (made it a little too smokey) kept the temp around 600 at the top of the dome, and bada bing bada bang that was one good pie. Also make sure to thoroughly clean out your Weber prior to making the pizza. My first pizza I neglected to do this and it tasted like jerk chicken 😜 thanks WTB!
Great 👍. Just practice some pizza cutting with the cutter didn’t expect that @ 2:34 lol. Over all I give %99 percent. It got into my head to do the same . I usually use normal oven.

the grate cleaner can be picked up at Lowes. I got one a few days ago. Fire bricks are available on Amazon. Just make sure you order actual fire bricks not red bricks.
I've been (using a gas grill, no pan) getting pretty good results but always feel I need to pull the pizza a little early to avoid burning the bottom. As a result, the top edge of my crust never browns as much as I'd like. The elevated pizza pan is a great idea! I can't wait to try it.

All is needed on you Weber Kettle is Pizza pans I use metal 18" pizza pans and the grill will season the pans. THEY WILL LAST FOR EVER. > and a short strong pizza peel. and 2 strips of tile! All you do is? turn the grate over cause of the handles. place 2 strips of porcelain floor title > where the pizza pans fit even on the grate. That is it. Your pizza will cook even top to bottom at 250 for 20 min. 400 deg at 15 mins
Good looking technique. I'm going to try that with my kettle. The store bought pizza oven is a little too pricey for me. I'm a welder so I will make my own if necessary but with the perforated pan and fire bricks it looks like it works good.

How many pizzas can you do on that load of charcoal? Does it take long between pizzas to heat up again or do you have to add some charcoal after every pizza. Looks like I'm going to try that next time I make pizza.
I think raising the pizza close to the kettle top is key to achieving the golden brown top. I haven't been successful in getting this result. Thank you!
You can also do this on a Weber gas grill. Elevate a pizza stone on fireproof bricks, get your grill up to highest heat, put your pizza (already on a pizza pan)on the stone, bake 10-18 min depending on your heat.

Hey WTBBQ. I cooked a couple of pizzas on my weber last night. I like your elevating the cooking level up into the dome for heat and using a pan with holes (vs a stone) for getting the bottom of the crust done. Smart. But my guess is I need a stone to get the char on top without burning the bottom when using fire. Last night I par baked the crust in the oven at 500F, then fired it on a stone in the weber. How do you handle getting a good bottom and wood fired top?
Hey my friend! Are you using the 'C' coal pattern? I would say you are never going to get a true wood fired top - I cook pizzas like this all the time and never get any of that leoparding on the crust. I have tried this method using the stone and much prefer the perforated pan.
Where did you get that circular pan with holes and what size pan is that. Also, is it nonstick? All I can seem to find are nonstick versions. Won't the grill be too hot for a nonstick pizza pan? Btw, thanks for sharing this video. I can't wait to try it!
Yeah this is just an aluminum one I think (not nonstick). Think this came from Macys years ago. Could probably find one on Amazon? I would not use a nonstick one....it will eventually get all scratched up and be garbage. Thanks for watching!!

Bricks are just for elevation to get more top heat - they were like 2.50 at a hearth and home type store. I have used a stone but on top of the bricks before with pretty good results. I prefer using the pan and stones myself. Thanks for watching Mukul!!

@@WhiteThunderBBQ yes, just like in your vid. One thing that was different is I have two metal inserts and I put my charcoal in them and put them in a semicircle around the outside like you did to contain the charcoal rather than not using them.
Alaskan ulu which I used to use because it was single bevel, easy to sharpen however somebody gave me a 12 inch chef's knife which is perfect for rocking down on it and slicing that pie.
Can you tell me how you get your temp high? Mine barely reached 500. I lit a full chimney. Add charcoal chunks. Opened all air vents to burn hot. Set fire bricked in and left lid open a bit like the video. It stayed around 400-450 degree. Pizza wasn't cooked beautifully because of the lower temp. Any suggestions helps! I have a 26" Webber kettle.
+idw85 I've never cooked on a 26 so these are all just guesses - maybe add a bed of charcoal to the grill to start and then pour the lit corals on top.... give it ten minutes to heat up and then add the lump and give it another ten to get going? Hope this helps!

Looks great. I bought an extra lid on Craigslist and cut a hole in it just enough to insert a pizza this way I never take off the lid and keep the temp way up. . I throw in the back a nice piece of oak and watch the temp climb to over 800 degrees. The pizza is a lot closer to the lid and takes me 4 mins per pizza. I also use a pizza stone for the crust. Thanks for your video which gave me the idea.
The hover grate is more stable and I would recommend it for that reason alone. Not sure on melting the plastic - mine doesn't have the vent tab on it. Cheers Brendon!

no idea Tom - I have only done 2 at most. If you keep the lid cracked, the temp recovers quickly.

I prefer this - usually but if I want that true Neapolitan pizza, I go KP all the time. KP makes better calzones though.

Bricks are just for elevation to get more top heat - they were like 2.50 at a hearth and home type store. I have used a stone but on top of the bricks before with pretty good results. I prefer using the pan and stones myself. Thanks for watching Mukul!!

I had trouble getting my grill up past 400 degrees. Maybe I didn't use enough charcoal?
possibly - could be a few things. Did you crack the lid?
@@WhiteThunderBBQ yes, just like in your vid. One thing that was different is I have two metal inserts and I put my charcoal in them and put them in a semicircle around the outside like you did to contain the charcoal rather than not using them.

Alaskan ulu which I used to use because it was single bevel, easy to sharpen however somebody gave me a 12 inch chef's knife which is perfect for rocking down on it and slicing that pie.

Can you tell me how you get your temp high? Mine barely reached 500.
I lit a full chimney. Add charcoal chunks. Opened all air vents to burn hot. Set fire bricked in and left lid open a bit like the video. It stayed around 400-450 degree.
Pizza wasn't cooked beautifully because of the lower temp.
Any suggestions helps!
I have a 26" Webber kettle.
+idw85 I've never cooked on a 26 so these are all just guesses - maybe add a bed of charcoal to the grill to start and then pour the lit corals on top.... give it ten minutes to heat up and then add the lump and give it another ten to get going? Hope this helps!
i tought the goal is 370F / 190•C?
Shoot for like 5-600F.

Just the metal pan for the pizza. Wrong nomenclature... Some of the steel sheets are interesting.

Looks great. I bought an extra lid on Craigslist and cut a hole in it just enough to insert a pizza this way I never take off the lid and keep the temp way up. . I throw in the back a nice piece of oak and watch the temp climb to over 800 degrees. The pizza is a lot closer to the lid and takes me 4 mins per pizza. I also use a pizza stone for the crust. Thanks for your video which gave me the idea.

would the plastic on the vent melt doing this? What do you recommend hover grate or bricks?
The hover grate is more stable and I would recommend it for that reason alone. Not sure on melting the plastic - mine doesn't have the vent tab on it. Cheers Brendon!

They are both excellent methods. the KP is more for a high temp pizza.

I am surprised the cook time was so long for such high temps. That must have been 600+. Would it be better to cook on a stone directly?
+James Lagnese thanks James! Personally I don't like messing around with stones on the weber. It takes the pit a couple minutes to recover temp once you remove the lid.
