I really like the upgrades they've given the music in this port. And the texture upgrades. The models seem to be redone, too. I'm not convinced this was a port, quite frankly.
The art style wasn't so much to do with Dragon Quest, from what I understand from interviews is that since this was the final single digit FF, the devs wanted to pay homage to the previous games in the series, and this is how they interpreted the 2D art era in 3D.
