3 medium/large sweet potatoes
Argentinian Red Shrimp ; cleaned and deveined
1 Green Pepper ; sliced & chopped
1 Sweet Onion ; sliced & chopped
2 tbsp Pesto (I used the Basil Pesto from Trader Joes)
1 tbsp Cajun Powder
1 tbsp Garlic Powder
1 tbsp Onion Powder
4 cloves of garlic ; chopped
1 cup Pepper Jack Cheese , shredded
Olive Oil
