We call this "Okoy" in the Philippines, but you have a more delicate way of eating it, on a bed of lettuce, with fresh herbs and pickled carrots. We just eat it right off the frying pan, dipped in vinegar with minced garlic 😊
Nếu muốn ăn bánh tôm Hà nội thì em ra ngoài bắc mà ăn. Người ta sống ở bên Đức mà bắt bẻ thế này, thế kia....Em có giỏi thì em upload lên mà làm đi. Bánh tôm Helene làm vẫn ngon và vẫn hấp dẫn như vậy mà còn chê. Mỗi người mỗi kiểu, tùy nơi mà làm đâu cứ phải đúng 100%.
Without the shell the shrimps will be overcooked and turn too dry. Try using small shrimps with soft shell. It's very crunchy after deep-frying and tastes really good. The shell includes Calcium so it's good for you :)

Did you cut the sweet potato as thin as I did? I fried it until golden brown and it really stayed crispy even overnight.
Yes you do need the ladle. Wait until it is half-cooked, then push out. If you put the mixture straight into the hot oil, it will fall apart.
