Caren, I started my beets on Sunday. I know you mentioned testing the taste. Questions? Should I stir them up some? Mine have a little white foam on top right now. Hello Cindy, yes I would shake or stir to keep the white foam from forming. Yes, you will need to refill the bubbler to the fill line if it has one or above the tube in the middle. Depending on the ambient temperature which determines rate of fermentation, I would taste the kvass after three days. Also, the bubbler will fall when fermentation is finished. That is usually the sign I use to stop fermenting. Hope this helps!

Sorry I don't know the final salt content but salt is necessary for fermentation. However I use a very high quality salt "Redmond", so I am not sure how that compares with processed salt. Thank you for watching!
I don't know about cinnamon but I have fermented garlic. The only factor is the salt brine % might not be high enough for garlic. Let me know if it works out. Thank you for watching!
My beet kvass always stays good for a very long time in the refrigerator. Months. I store the kvass in flip top bottles and keep my refrigerator on a colder setting. If the beet kvass has an unpleasant smell or if you see mold I would definitely toss it out. Thank you for watching.

Beets will stain your cutting board. Cutting up some apples will bleach out the stain. At least the apple juice sure bleached out the grape juice stain!!

Russian beet kvas is made with honey or sugar if you prefer and not salt.
