Mary, you'd laugh if you only knew how many times I've rewatched (listened to) the same cooking class while preparing one of the many dishes you've inspired. My husband has grown so accustomed to hearing your channel music that he asks what surprise dish you have in store for him haha. Thank you! Oh, and my mom sends me text messages addressed to her 'sweet' daughter and I write 'Hi sweet Mom'. I'm bringing her your cookbook for her 80th bday next month when I visit RI from Dallas. Hi Mary- I too loved all the old PBS cooking shows, especially since they really taught you to cook- all the food network shows now seem to be competitions. I will add America's Test Kitchen was a great one too. Thanks for actually teaching us how to cook!
😂 Oh, Mary! I love watching your cooking shows! When you said you felt so virtuous eating all of the arugula the laughter just bubbled out of me! I miss the old cooking shows and i am grateful for your show!
Galloping Gourmet! My Mom bought me a tape recorder to make sure I wrote all of the ingredients. I was in 5th, 6th & 7th grade. I'd make dinner every night for the family but with flambe, I needed to wait for my Mom to get home from work before I lit it on fire. Julia Child was another favorite. Nobody liked my older sister who was 5 years older cooking, so I'd cook & she'd clean! I loved that trade off.
I always loved Julia Child as well. My favorite segment was when she lined up all the chickens - from the fryer to the Capon and said what they were all for! Great video Mary!
Dear Mary, listening to you is like listening to myself...going down many different rabbit holes ..so much fun...n so much wisdom..time-- tested by experience.Lesrning all the time.Your love shines through,Mary. Well- done, my dear sister!❤
Nothing better than homemade pancakes fried in bacon grease. Or even French toast when you are light on eggs, bacon fat fried bread is so yummy. Our family always took it camping. We stored it in a glass peanut butter jar. Or even in an old shortening can. No guilt about tossing it later if it was starting to get old. Good idea about seasoning cast iron with bacon fat
I just get so much joy from watching you cook and taste test. Your just like family to me. I remember watching cooking shows when I was younger and you are just as good if not better. God bless you!
I love your videos. Everyone in my family knows your voice. :) I have requested your cookbook for a Christmas gift (from my sweet husband) and i plan to give some as gifts to others as well. Much love from Arkansas! ~Kim
I watched all the old cooking shows as well and loved them! When my father retired, he started to watch some of them as well. His favorite, being from the South himself, was Justin Wilson. I can still hear Justin Wilson saying “I guarantee “! Brings back happy memories from many years ago!
I've made these, and they are good, it's about time I should make them again....kinda forgot about them....thanks for the reminder Mary....I've used pork sausage also, I like it better than bacon....and I like a little heat in mine too besides black pepper....but I like putting the cheese on last......and I like them over easy too, you could even scramble eggs for this, just scramble them and add to the cups and put cheese on top....think this is what I will make next.....🤣😋
I love the way you patiently teach. And you add so much other information than the video title reveals!! Love you, Mary. God bless you for all you do. I've pre-ordered your cookbook. Can't wait to get it!! ❤
My father also enjoyed watching the Louisiana Cooking show. He would often quote Justin and make us all laugh. Think I’ll give this recipe a try…they look yummy. Thanks for always sharing your knowledge and great recipes.
You might want these for dinner. I use to feel tired after eating eggs then found out why, they are high in tryptophan, discovered in my weight loss journey all the reasons why eating on time certain foods can cause a huge difference. I eat sweets at lunchtime now haven't gained any from eating it anymore either and no longer feel deprived 😊
Those look delicious! I’m not an egg yolk fan so I would probably whisk my eggs up before I put them in the cups. Potatoes at breakfast are my favorite!
I add bacon grease when I bake biscuits. I flip each biscuit in melted bacon grease. It gives such a nice crispy flavorful texture. I fry apples in it and then add brown sugar and cinnamon to it too. My grandmother made a German salad dressing and poured it over red tipped lettuce, called wilted lettuce. You serve it over your lettuce right off the burner. You take eggs beaten up and heat in a pan, with melted bacon grease and add a tablespoon of vinegar to the egg mixture and slowly cook on the stove till the eggs thicken in to a gravy consistency. Must continue to stir till desired thickness. Add salt and pepper. Then pour over lettuce with crumbled bacon bits, and diced green onions. It will wilt the lettuce and stir altogether. Serve immediately. It’s such a nice salad with such great flavor! ❤love cooking with bacon grease. And of course I’ve used it to fry my potatoes too! 😊
I loved all those PBS cooking shows. The most helpful one currently airing on PBS is Americas Test Kitchen : Cooks Country. They work out recipes and highlight where pitfalls can happen. Very useful for the novice cook. I will love using this recipe for my next brunch gathering. Much more exciting than the typical bite-sized quiche ❤
Your channel really reminds me of the cooking part of the Victory Garden on PBS (maybe 30 years ago?). The lady on that segment always did really seasonal dishes using fresh vegetables and "real" ingredients. My favorite cooking program on PBS was The Frugal Gourmet with Jeff Smith, I think his show was on in the 80's. (I don't agree with the events that led to the end of his career, but I can separate his cooking show from his personal behavior.)
Thank you, Mary. I’m looking forward to making these, soon. BTW, my Mom and I used to love watching Graham Kerr (pronounced ‘care’). We even surprised her for her birthday one year and participated as his audience for one of his shows in Seattle. It was SO FUN!
Sweet sweet Mary! Love your longer videos so please feel free to go down those rabbit holes of knowledge! BTW, the dollar tree in my area sells ice cube trays w/lids
Thank you so much Mary. You give so much of yourself and it is truely appreciated. These look so scrumptious and I can't wait to make them. I also bake bacon in the oven. I'll try your foil method as well. I place mine on a cooling rack placed into the baking tray and collect the fat on the bottom. Love your work.
Oh my, looks SO delicious! My Mom and Grandma, now me, tried to use a variety of "colors" when cooking. ie, red pepper, onion, spinach, etc makes it pretty AND tasty. ❤
One of the PBS cooking shows I learned a lot from was America's Test Kitchen with Christopher Kimball. Lots of kitchen science but also lots of basic kitchen skills.
Hi Mary, This recipe looks delicious, I can't wait to make them. I always trust your recipes and have never been disappointed. Sending love and blessings to you and your family. ❤ Maggie
Mary I save my bacon grease and add it to my beans when cooking it flavors them so well. I too make these hash brown breakfast meals. I like to make my own bacon crumble and it works great and save extra time when making these. I put them in the freezer for my grandson to grab and throw in the microwave while he's getting ready to catch his bus at 6:30 am he has an hour ride to his private school and eats yhem on the bus. One day he asked me to make 2 dozen for his driver to take home so he knew he was getting a good breakfast. So no when I go to visit him in up State New York we have tried making with ham as the base and we even turned the muffin tins upside down and weaved bacon cups up to put our ingredients in this one is his favorite. He called me the other day and asked me how long to bake them . He said that he couldn't wait for me to come visit he needed them for his cooking badge in Boy Scouts. Lol I was just so tickled these has made his top food picks. I loved watching Julia Childs growing up. I pray you and your family are doing well.
My dad and I watched a Justin Wilson! He never measured anything. I am very much like that now. I can eyeball most things. It amazes my stepdaughter. I told her it is called experience! 😂
These look yummy! I only cook for 2 of us now and wonder if the leftovers could be frozen? It would be handy to not have to cook breakfast every morning!
They refrigerate well. But when frozen, they can get a bit soggy on the reheat. But others have said they crisped up so it’s worth a try. Love, Mary❤️🤗❤️
Mary, I struggle with eating breakfast at all but I need to eat a protein rich breakfast. I've thought that this would be a good option. But it's just me and I need to be able to freeze stuff. But then comes the issue of texture. Do these freeze well? And when eaten later is the texture affected?
Hi Stephanie, I understand completely. These refrigerate well for a few days and then can be re-warmed in the toaster oven or an oven but I will be honest with you….I don’t think they freeze well. I know other Internet recipes say that you can freeze them, but I think on reheating the texture is really off. Try my breakfast egg muffins instead. They freeze and re-heat really well: th-cam.com/video/EWaVpTELxhU/w-d-xo.html Love, Mary ❤️🤗❤️
@@MarysNest thank you so much. I appreciate your honesty about that and for the link to a good freezer alternative. Thank you for taking the time to answer my question.
I'm like you, Mary --I like bakin' bacon, too! 😂 😂 Seriously, I have 2 old (38-year-old) cooling racks that I set inside my foil-lined baking sheet, and put my bacon on that. Then, the fat renders off, and I don't have to drain it so long.
Sounds yummy Mary, but I'm on the CARNIVORE diet now. Trying not to spike my insulin EVERY time I eat sugars & carbs. A pound of potatoes is the same as a pound of sugar, unfortunately. How bout a recipe for PEMMICAN please Mary?
Yes, but just like with the larger muffin tin, make sure that you keep the shredded potatoes spread thin. And you can either use 12 eggs or do 6 egg cups and 6 veggie cups. Love, Mary ❤️🤗❤️
Hi Doug, I think I found it at a local kitchen store but I have also seen them in the kitchen aisle at my grocery store so be sure to check next time you go to your local market. Love, Mary
That is a great question. I am not familiar with specific medical questions so you will want to ask your doctor and also consult the Weston A Price Foundation website to learn about real fats: www.westonaprice.org/know-your-fats/#gsc.tab=0 Love, Mary
@@MarysNest thank you for the response. I'm all for the natural stuff. I believe they are much better and healthier than all these artificial substitutes. But there are people in my family who do have high cholesterol and I just wanted to know if it would be ok for them. Thanks for the link. I will check it out.

HI MARY, watching all of your videos 😊 thank you. Wanted to point out because of a few videos where you were not aware of removing fluoride from the water in some recipes, like water kefir. Fluoride is extremely toxic and is attributed to reduced IQ and many other things and shouldn't be ingested at all, even toothpaste. Dasani, and other brands of bottled water don't have it, but you have to search hard to find a filter to remove it, Zero Water does and reverse osmosis. Boiling water doesn't get rid of it.

One of the PBS cooking shows I learned a lot from was America's Test Kitchen with Christopher Kimball. Lots of kitchen science but also lots of basic kitchen skills.
I use my food processor to grate anything. It saves so much time!
Thank you! I made 12 of them for a Sunday brunch. Everyone loved them!
Mary it's Laura linkous on my friends phone wow thank you for such great information can't wait to try it!
Yum. I so enjoy watching you and your wealth of Modern Pioneer knowledge. I’m curious, why do you have 2 coffee pots side by side?😊
Your videos inspire me to cook. Thanks

Thank you SO much for the kind words!! Love, Mary
Hi Vicki, Wow!! All great tips!! Thanks for sharing!! Love, Mary❤️🤗❤️
I also enjoyed the PBS cooking shoes, Julia Childs etc. Aaaa those were the days. Peace and Blessing.

Just made it. Very nice for breakfast. I added mushrooms, I love them.
My dad and I watched a Justin Wilson! He never measured anything. I am very much like that now. I can eyeball most things. It amazes my stepdaughter. I told her it is called experience! 😂
Yes indeed!❤️🤗❤️

Hello Mary, love this video, you teach me alot.
Hi Mary! I was wondering if you would be able to possibly talk about alternate meats for people who can’t eat pork, like beef bacon and the like.
Will do!

Hi:) Would scrambling the egg change thev cooking time or anything else? I know it'd change the look, of course:)
Good question. I haven’t tried it but I would try it and just keep an eye on it. Love, Mary
I think they might reheat well in an air fryer after they’ve been frozen. I don’t have one, but my daughters use them.
The PBS cooks of yesterday! The Frugal Gormet!
I loved all the shows you used to watch…. Also the earlier Emeril Shows “bam” and the chocolate chef Jacques Torres
I think bacon grease would be great to add to a stew or soup! 😋
Love that!!
Mary, have you tried to make these ahead of time and freeze them?
I find that they tend to not defrost all that well. They didn’t crisp up as I had hoped. Love, Mary
I like the hash brown crust, but want to make something to take to a ladies meeting. Could they be filled with a kiesh filling and rebaked ?
Sorry--quiche
I love that idea! Perfect!❤️🤗❤️
Good morning Mary❤
Hi Valerie, Hope you are doing great! Love, Mary
@@MarysNest yes I am Mary and I hope you have a blessed beautiful week to
Will this really work in a regular size muffin tin?
Yes, but just like with the larger muffin tin, make sure that you keep the shredded potatoes spread thin. And you can either use 12 eggs or do 6 egg cups and 6 veggie cups. Love, Mary ❤️🤗❤️
Is the butter unsalted?
Yes.
my babysitter used to watch the galloping gourmet and follow it up with the exercise guy Jack la lane. oh my that was ages ago
Oh my goodness!! My mom and I used to do the Jack La Lane exercises together!! Love, Mary❤️🤗❤️
You are right that red bell pepper is rich in vitamin C, but to benefit from it, it should be eaten raw, as vitamin C is destroyed by heat.
Also line those tins with Pillsbury dough - like biscuits - with space to layer goodies like your recipe.
I wish i could find a large glass butter dish like that. Mine aleays gets butter on the lid
Hi Doug, I think I found it at a local kitchen store but I have also seen them in the kitchen aisle at my grocery store so be sure to check next time you go to your local market. Love, Mary
I have a question regarding the fats you mentioned Mary. Are they healthy for people who have high cholesterol or have fatty liver?
That is a great question. I am not familiar with specific medical questions so you will want to ask your doctor and also consult the Weston A Price Foundation website to learn about real fats: www.westonaprice.org/know-your-fats/#gsc.tab=0 Love, Mary
@@MarysNest thank you for the response. I'm all for the natural stuff. I believe they are much better and healthier than all these artificial substitutes. But there are people in my family who do have high cholesterol and I just wanted to know if it would be ok for them. Thanks for the link. I will check it out.
I think I need a Texas sized muffin pan 😂
Justin Wilson from Louisiana
Yes indeed!!
Mary, I bought a jar of beef tallow and unable to use it. The smell is terrible. Curious why is that? I believe i heard you state it does not smell.
Peel the bell peppers (red capsicum) or the lectin in the skin will give you leaky gut. Use a regular peeler with a sawing action.
