Instant Pot Pulled Pork: So EASY and So GOOD!

- This Instant Pot Pulled Pork recipe is an affordable, flavorful recipe for BBQ pork. It is perfect for entertaining with and for summer gatherings--really it is great all year long! And with the addition of 2 ingredients--it mimics the flavors of apple juice.

Full Recipe for Pulled Pork:
3 lbs boneless pork shoulder, or loin trimmed of fat and cut into 4-inch chunks
2 tsp salt
2 tbs paprika
1 tbs onion powder
2 tsp garlic powder
2 tsp pepper
1 tbs chili powder
1 cup apple juice or chicken stock or beer
1 teaspoon liquid smoke
1 to 2 cups of your favorite BBQ sauce (optional)
Cut the pork roast into 3-4 inch chunks (this will REALLY help your pork to get tender).
Combine the dry spices and rub the pork roast with the spices.
Place the seasoned meat in the inner pot, along with the apple juice or stock and liquid smoke.
Place lid on pressure cooker and be sure vent knob is pointed towards sealed.
Cook on high pressure for 40 minutes if using a pork shoulder or butt, and 30 minutes if using a pork loin roast.
Once cook time has elapsed, let pressure release naturally for AT LEAST 15 minutes.
Once pork is cooked, remove pork chunks from Instant pot and place in a large bowl. Shred pork with 2 forks or handheld mixer.
Add BBQ sauce to shredded meat and mix together.
Serve as desired.
Coleslaw Recipe:
1/2 head green cabbage shredded
1/2 cup mayonnaise
1 tablespoon sugar
1 tablespoon apple cider vinegar or white vinegar
1/4 teaspoon salt
1/4 cup minced onion
Mix together mayo, salt, vinegar, onion, and sugar together. Toss with shredded cabbage and refrigerate for at least 30 minutes before serving.
so my wife won an instant pot, came to youtube, we followed this recipe. we will never buy (already pulled) pork ever again. This was so awesome. and yes you are right, do not need to sear the meat before cooking. Thank you !!!

Hi there! Yes! I would suggest cutting the beef into large chunks and seasoning well. Cook for 45 minutes on high pressure with a full natural pressure release.

Attempting your recipes which looks fantastic. I noticed the written ingredients for the spice rub in the description box are different to what you say in the video. The amounts are different, so just winging it.

I am glad you found my recipe easy to follow. You need to still use a full cup of apple juice (or 1.5 cups for an 8 quart IP) but you can halve the other ingredients. Enjoy!

Hi. I would like to try this method of cooking pork for my Mexican gorditas filling. I pretty much just need to add salt since it will be going into a dried chile sauce mixture. Do you still recommend I use apple juice or can I use water?

It is usually pretty greasy, so I strain and discard.
Can you do this recipe with slow cook option? If yes would there be any changes to the recipe in this instance (extra liquid for example) and what would be the time (6-8 hours)? Thank you

You can use the same spice blend, it is just to account for less liquid when using the slow cooker.

Thank you! The pulled pork freezes great--I do this all the time myself. You can freeze the leftover pulled pork in 2-3 cup portions in freezer storage bags for up to 3 months. To heat from frozen, place the frozen pulled pork in the instant pot with 1 cup of apple juice and cook on high for 10 minutes. Alternatively, thaw the pork overnight in the fridge and then reheat in the microwave for a couple of minutes with a bit of juice to prevent it from drying out.

I agree it makes a HUGE difference for MOST recipes. This one it does not.
Cutting it into quarters or eighths will benefit from searing.
Edit: I enjoy searing it, but.... I might buy into your idea.
I know I'm two years late to the party, but I agree. I've tried both ways. And searing absolutely makes a difference, unless you have limited taste buds.

Very nice. I love pulled pork but haven't made any in my instant pot yet. Was craving some today and I'm glad I found you video. I'm gonna use bbq slaw, and I'll substitute apple juice with apple cider vinegar.

I do a lot of “true” BBQ on smokers. Gonna have to try this and see how it compares. Usually it’s at least a 6 hr process with a pork butt cook. The speed appeals to me! I’ve tried ribs before in the instant pot and they were ok. Not like the ones I cook on the smokers, but will try again to see if I can get it more perfected. I even finished them on the grill. Anyway, subscribed as I really like the instant pot and want to do more with it.
Smoked pork is delicous, that is for sure. However, I think you will find that this recipe is pretty darn close. We have a smoker as well, and more often than not, make pulled pork in IP, so easy, and so tasty! Enjoy!

Hi Diana! As long as you cut the meat into the chunks as instructed, just increase the spices and liquid BUT leave the cook time the same. It will take longer to come to pressure.

how many poundsof meat did u use? that might affect the cooking time?
I used 3 pounds, but when cut up into chunks the cook time is the same regardless. You base cook time on largest cut of meat.

Here is my hint: Put the liquid in the Instant Pot before you put the meat in. This cuts down on the chances of getting the "burn" notice when you cook. I figured this out through trial and many errors. It also works when cooking noodles. I just make a habit of putting the liquid in first. Just thought I'd share.
You can also use a trivet, a little metal rack to prevent contact with the metal bottom.

Can a Boston butt also be used?
Absolutely! For a butt or shoulder roast, cook for 40 minutes for the chunks or 40 minutes per pound if using a whole roast. Enjoy!
In the video you specified 1 tbs paprika but on the written recipe you said 2 tbs.
So sorry! Either will work. 1 tablespoon is 3 teaspoons, 2 or 3 teaspoons won't impact the flavor much.

Absolutely love stainless steel, and will not use a coated product again.This pot has many settings and many buttons, and i need to sit down with a manual to figure out which setting to use. I used the basic functions, and even though i am not technologically skilled, i turned it on and assembled it without any help.Very satisfied with this product overall.

Did not include the weight of meat nor which kind of liquid smoke.
It does not matter the weight for this recipe. You can cook as much pork as you like, as long as all the pieces are cut into 2-3 inch chunks. Any brand of liquid smoke works well.

No! It was apple juice or apple cider--do not use vinegar or it will ruin your dish (way, way too tart!)

Apple juice in no way mimics the flavor of apple wood smoke. Fruit woods impart a less stringent smoke flavor, but in no way taste like the fruit that came from the tree.
