Made this today for breakfast. Used canned tomatoes since my fresh romas are flavorless and out of season. Added some mushrooms in with the onion and garlic, since they needed to be used up. Fresh Malabar spinach. Topped with parm. Used smoked Spanish paprika, since it's what I had. And an extra egg. VERY good.
@@SpainonaFork Made again today, with fresh turmeric in with the onions and garlic. Not bad at all. Next time I'm going to crush the beans a bit just to see what happens.
Made this for dinner last night. Quick , easy and delicious. Husband asked me to put this on my 'keep' list. I am considering making this into an emergency meal using dried veggies and canned chickpeas and tomato sauce. Won't be as good as fresh but will work in a pinch when we lose our hydro and need to cook on a camp stove.

I found this out of balance being too sweet from spinach, tomato sauce, and paprika. Too lean to. I needed yolk with every bite to balance Had to eat it on baguette and butter.
